Our European cheese cruise this month was SO MUCH FUN! I am still reminiscing on the beautiful things we tasted and stunning things we saw across Switzerland, France and Germany. Some highlights were our cable car through the treetops of the Swiss Alps, private cheese tastings at and on our boat’s roof deck, so much amazing history and every single sip of beer in Germany. Once again took great care of us on their chic cruise ship where the chefs dazzled us with local food and endless wine pours. I felt lucky to travel with a group of fun and curious ladies who I can now call friends! 🧀🐮💕🧳

Our trip with for 2027 is in the works! We are still nailing down dates and details but you can expect all that info in the Fall. I’m not yet ready to reveal the location of next year’s cheesy adventure but I’ll leave you with some clues: 🥐🍷💌🎨⚜️🌹🥖. Any ideas where we are heading? Let me hear your guesses in the comments!

Last month, Alex and I had the pleasure of visiting ! We drove out into Pennsylvania farm country where we got to hang with Stefanie Angstadt, the owner and head cheesemaker, who gave us a tour of the creamery and aging facilities on site. Stef leads an all-female team of cheese geniuses who are converting high quality local milk from heritage breed cows into unique and delicious cheeses. Stef designs her cheese recipes to highlight and celebrate the milk’s sweetness, as well as its shifting seasonality. We love serving these excellent products at PCS! 🧀🐄🌸

Last night I had the pleasure of leading a convo at the adorable with one of my absolute cheese heroes, in celebration of his new book! Trevor’s work exploring pastoral communities and documenting old old old world cheesemaking traditions is extremely cool and important. His new book talks about some of his impressive travels and highlights why these traditional dairying techniques have a lot to teach us about the connections to land, animals, and microbes that have tragically been lost in our current food systems. The book was beautiful, informative and inspiring! I highly recommend picking it up and giving my guy a follow. 🧀🐐🌾

It may be frigid outside but Alp Blossom always makes me feel like springtime! Made in the Allgäu region of Bavaria, this colorful wheel of Alpine goodness gets coated in the same blend of flowers that the cows are grazing on. That way, all the awesome flavor and complexity from the super nutrient-dense pasture gets imparted onto the rind and brings all that character to the tasting experience. Not only is Alp Blossom gorgeous and fun to serve, but her savory notes of herbs, hay and beef broth make her a fave here in the classroom. 🌸🧀🌼
