Unbelievable…. We were so excited that the potholes in front of the bakery were finally addressed today. Literally 2 minutes after the holes were filled with concrete this happens. 🤦🏻‍♂️ When I say 2 minutes, I mean exactly 2 minutes. SMH.

Sadly enough we are in the final days of the Summer season. For all of you Lemon Cooler and Lemon Blueberry Ring Cake fans out there, this is last weekend they will be available for another year.

Next week the Jewish Apple Cake, Pumpkin Cinnamon Cream Cheese Cake ring, and the Pumpkin New York Cheese Cake will all return to mark the beginning of the Fall Season.

Well we are in the final few weeks of August and that means it's time to start our gradual Cannoli shell inventory build up. Beginning this week all the way through the final week in December we will be making your favorite Philadelphia sweet tradition. Late August and September are vital months for us to build our inventory so we can free up time to make all of your other favorites as we get closer to the Holiday Season. We made cannoli shells on 4 of the 7 days this week. Each day consisted of 43 total production hours from the mixing of the dough until the last shell was packed away.

Of course we are talking about the Anisette and Zwieback Biscotti. Back in the day every house had a tin of these sitting on their dining room table in case "Company" would come over. The process begins early in the morning when Robert scales and mixes each batch. On this particular day Robert made 4 separate batches to complete the order and restock our retail locations. Once mixed, Robert pipes the batter on baking pans and bakes each batch in a hot oven. After all the biscotti is baked and cooled, the finishing team of 3 cuts each loaf into individual pieces, and places them back on pans to be toasted at 425 degrees F. Finally, after the toasting the individual biscotti are hand packed in containers for later use.
