on it. The hat always seemed to fit his mood – or the occasion – perfectly. But my mind somehow keeps coming back to those hats. People don’t really wear hats much anymore, I suppose. It’s become an affectation or a fashion statement. But in those days, it was something more. That we cared about quality, polish and finish. A subtle, personal signature. From an era when taking the time to do it the right way mattered. I founded Dad’s Hat because I, too, want to do it the right way. To take up a tradition. To make something that mattered. By hand, in small batches. Using only natural, local ingredients and the most careful methods. Dad’s Hat is made right here in Pennsylvania — the birthplace of Rye Whiskey — in honor of my father, who enjoyed rye whiskey and served it at the family’s tavern; and of that wonderful, optimistic time in America’s history when we made a lot of things and took care to make them well. My heart tells me that many of us are searching for that spirit again. I believe Dad’s Hat Rye reflects that same simple, uniquely American personality better than any other whiskey. Crisp. Smooth. SPRING is finally coming, so we decided to have a special sale to celebrate. Our Syrah Barrel Finished Rye is available from our online store for shipping to PA customers, the Mill Street Tasting Room, or at the distillery for $49.99. This unique expression was finished in a new French Oak barrel that was used to make Yakima Valley Washington Syrah. The combination of the dark fruit from the syrah wine and the warm oak from the barrel is a complex counterpoint to the spicy notes from our perfectly aged straight rye whiskey. This one is great over a big ice cube that releases wave after wave of flavors as the ice slowly melts.

We were asked by our distributor in New York, PM Spirits, if we would work with them to create a new finished whiskey using a hard-to-get Oloroso sherry cask that they obtained from their friend and Sherry expert in Spain, Eduardo Ojeda. We selected some of our delicious 6 year old rye to rest in this sherry cask for 8 months. The result is a complex and concentrated flavor bomb. We convinced PM Spirits to allow us to sell a few cases here in PA before shipping the rest to New York. These won't last long. This weekend at our Mill Street Tasting Room in Bristol, we have a twist on a classic cocktail that is a perfect choice to celebrate Valentine's Day with your sweetheart (or just to enjoy on your own!). The White Chocolate Clover Club is our take on the classic. It is a tasty combination of our White Rye, chocolate, raspberry, lemon, and a touch of toasted marshmallow. The Clover Club cocktail pre-dates Prohibition, and is named for the Philadelphia men's club which met in the Bellevue-Stratford Hotel at South Broad and Walnut Streets in Center City starting in1882.
