Monday’s are for deliveries 🚚 but I’m still reminiscing on last week’s Plant-Based Poke Bowl.🌈

Swapped the raw tuna and salmon for sesame-tamari-marinated beets and it turned out better than I could have ever imagined!!! It’s hard to tell from the picture, but the beets even create the same striations that fish have, it’s so crazy and so delicious.

I’m also super zoned in during cook sessions and forget to take photos, so here’s the portion I made for myself (not the customer’s containers which display all the ingredients nicely). We do the best with what we have 😌
