Thanksgiving Menu!

Orders Due by Nov 22 at 6pm or limited to available stock. Cured items must be ordered by November 8th.

Will be ready Thanksgiving morning by 11am unless i hear different or can smoke on Wednesday afternoon/evening

Prime Rib

All roasts will include my Au Jus powder that is just add water and warm.

Roasts will also come in a disposable pan that you may use in your oven or pellet grill if smoked.

These prime rib will be cooked the morning of Nov 26th to internal temp of 100° so you can heat them to desired doneness. Willing to heat to rare if you are needing it for lunch.

Ready for pickup at 11am or can cook Wednesday for late afternoon pickup

Busy weekend as cooked 250 hamburgers and some hot dogs last night to help support the Buffalo County Sheriff Tailgate and Scholarship Fundraiser. Thank you for all you do to support our youth and keep us safe. Buffalo County Sheriff's Office

Did you know we just don’t cater but we also offer à la carte items? Need pulled pork or sliced beef for a gathering, wanting to get some cobblers (yes they freeze well) and can be gluten free even, need a large pan of loaded ranch hashbrowns, or other ideas…give us a call and let us price out what you are needing. The more time we can get, the better we can make sure we have the ingredients in stock and work it into our schedule.

Wow Custer County, you rocked the à la carte. 60 # of pork roasts, 36 # of beef flats for sliced beef, 25 # of marinated chicken plus over 3 gallons of beans, 15 # of cheesy potatoes, 10 # of smoked Mac and cheese, salads, sauce, and 10 cobblers (peach, apple, and cherry. I also had some special orders for my Corn and Mac so have 1/2 gallon of that being cooked. Also have on a couple brisket to catch up some orders and a 16 # rib roast for shaved prime rib for an order. 23 people ordered so will be a busy pick up. Also a reminder for those that didn’t order à la carte but have bought brisket over runs, I will bring it up as well so we can get you enjoying it.

Last of the crazy 2 weeks was last night…shaved prime rib, sliced pork loin, loaded ranch hash browns, Pa Shayne beans, roasted corn Fritos salad and cherry/peach smoked cobblers. Thank you Dixon Ag Services, LLP for using us to cater your customer appreciation meal all these years.
