🥔 Roasted Farm Veggie Sheet Pan Dinner
Ingredients
* 4 Baker Potatoes, cubed
* 1 Bundle Brussels Sprouts, halved
* 2 Sweet Carrots, sliced
* 1 Bundle Mixed Mushrooms
* 4 Green Onions, chopped
* Olive oil
* Salt, pepper, garlic powder
Directions
1. Preheat oven to 425°F.
2. Toss all vegetables (except green onions) with olive oil and seasonings.
3. Spread on a baking sheet.
4. Roast for 35-40 minutes, stirring halfway through.
5. Top with fresh green onions before serving.

🌽 Fresh Summer Corn & Tomato Salad
Ingredients
* 4 Ears Sweet Corn
* 2 Beefsteak Tomatoes, diced
* 2 Green Onions, sliced
* Olive oil
* Lime juice or vinegar
* Salt & pepper
Directions
1. Cook corn and cut kernels from cob.
2. Mix corn, tomatoes, and green onions.
3. Drizzle with olive oil and lime juice.
4. Season to taste.
5. Serve chilled.

🍄 Stuffed Beefsteak Tomatoes
Ingredients
* 4 Beefsteak Tomatoes
* 1 Bundle Mushrooms, chopped
* 2 Green Onions, chopped
* 1 Baker Potato, cooked and mashed
* Salt, pepper, garlic powder
Directions
1. Hollow out tomatoes.
2. Sauté mushrooms and onions.
3. Mix with mashed potato.
4. Stuff tomatoes and bake at 375°F for 20 minutes.
5. Serve warm.

🥦 Creamy Broccoli Potato Soup
Ingredients
* 1 Bundle Broccoli
* 3 Baker Potatoes, diced
* 2 Green Onions
* 1 Carrot, diced
* 6 cups broth
* Salt and pepper
Directions
1. Add potatoes, carrots, onions, and broth to a pot.
2. Simmer 20 minutes.
3. Add broccoli and cook 10 more minutes.
4. Blend partially for a creamy texture.
5. Season and serve.

Ingredients
* 4 Ears Corn (kernels removed)
* 1 Bundle Mushrooms
* Brussels Sprouts, sliced thin
* 2 Green Onions
* Soy sauce
* Olive oil
Directions
1. Sauté Brussels sprouts for 5 minutes.
2. Add mushrooms and corn.
3. Cook until tender.
4. Stir in soy sauce.
5. Top with green onions.

Ingredients
* 4 Baker Potatoes
* 2 Beefsteak Tomatoes, diced
* Mushrooms, sautéed
* Green onions, sliced
* Broccoli, steamed
* Butter, cheese, or sour cream (optional)
Directions
1. Bake potatoes at 400°F for 45-60 minutes.
2. Split open and fluff.
3. Top with broccoli, tomatoes, mushrooms, and green onions.
4. Add favorite toppings and enjoy.
