Saturday night sets the clocks back an hour, the days are getting shorter, the chickens are starting to lay fewer eggs and lose their summer feathers, and chilly evenings are here to stay, at least for a few months. Time for warming spices, heartier textures, richer flavors. The November 6 Bake Box kicks off the season with all of the above, beginning with Churro Coffee Cake Bundtlettes. They're rich with a sweet and spicy cinnamon, both in the batter and sparking in the cinnamon sugar coating, and crowned with a generous dollop of silky dulce de leche. Every Bake Box includes four perfectly-sized little cakes. We love the bright pop of flavor boiled c***r brings to baking, and next Friday's Apple C***r Whoopie Pies get their flavor from the rich reduction. Made with fresh c***r, boiled c***r and autumn spices, filled with MORE c***r in the fluffy cream filling, we think these may edge out our traditional Whoopies as the standard. Four generous pies are in each box. We made a sweet and slightly spicy Roasted pumpkin Seed Brittle for this coming Friday's pop-up at , and as soon as we tasted it we knew it had to go into next Friday's Bake Box. Already the perfect buttery brittle because it doesn't stick to teeth, we've subbed roasted pepitas for the usual nuts, sprinkled in a mixture of cardamom, cinnamon and a pinch or two of smoky-sweet chilis. What resulted is one of our new obsessions — and we're betting you'll be obsessed, too. Each Bake Box includes a full sized package. Pan co' santi is a traditional Sienese dessert that is typically enjoyed in autumn. It has been prepared for centuries to celebrate All Saints’ Day in October and November. The dough is made with dried fruit, spices and sometimes a splash of red w**e to give it a darker colour, making this sweet bread a true seasonal delicacy.
