You have options when it comes to your smoked products. You’ll notice we added Nitrate-Free (Uncured) Smoked Products on our cut sheets, but what does uncured actually mean?

Uncured means the product is made without the addition of conventional synthetic curing nitrates or nitrites. Instead, uncured products may use naturally occurring nitrates from ingredients like celery powder, depending on the recipe.

In plain English? It’s a different approach to curing your bacon, ham, and other smoked products.

We believe you should know what you’re choosing when you fill out your cut sheet. That’s why we offer options and let you decide how you want your meat processed.

Not every great steak comes from the loin.

The Flat Iron comes from the chuck and is one of those cuts that proves you don’t need a ribeye to have an incredible steak. Properly trimmed, it’s tender, richly marbled, and full of beefy flavor.

You’ll need a hot grill, good sear, and simple seasoning.
Then finish it with blistered garden tomatoes for the perfect summer plate.
