From noon today (Saturday May 2nd) we will be hosting our first of many summer pop ups. Starting with “Rose & Ribs”

Today and tomorrow we will be leaning heavily into North Carolinian BBQ, with tye wonderful formerly of Bourbon & Bones, who now works with us making delicious things! We have been prepping hard for this one and are very excited!
We broke down a 1000 lb Wagyu beef and have smoked both giant briskets, all the short ribs and back ribs, we have “boudin” pork spare ribs, a biscuit breast sandwich, and lots of other things too!
And we might even be make some cheeseburgers 🤫🤫🤫
Rosé wine tasting $10 for 4 and free if you buy a bottle!

Testing some ribs for our Saturday pop up at the shop.
Baby back beef ribs, wagyu short ribs, pork spare ribs, coleslaw and potato salad and of course lots of rosé wine

Noon until 3 pm, or we might keep it going if we’re busy!
We are gonna be testing some new ideas over the coming weeks, some will work and some might not! But it’s gonna be fun and delicious either way!

Some of the incredible meats we have in the meat case this week.
WA Wagyu beef from those are the Denver steaks aka Zabutons. Great marbling and beautiful flavor.
Also we have a stunning looking whole hog also from check out the coppa roast. Great as a steak or smoked or cooked anyway as it’s the most versatile cut on the whole animal!
And the sun is out so we got some@spiced lamb burgers and some Wagyu burgers. And of course there are many other delicious meats!

Spring called — it wants you to celebrate! ☀️🥂

We’re kicking off the season with a rosé & ribs tasting this Saturday, noon to 3pm. Sample our newest pinks, nibble on slow-cooked BBQ ribs, and leave with a few bottles of liquid sunshine — in-shop or grab it all to-go.

Time to say good bye to another small neighborhood restaurant, as we are go back to the basics for the foreseeable future.

This feels like a similar time to March 2020. The economic and political uncertainty, rising food costs, staffing, healthcare, and a real shift in how people are dining have brought us to a crossroads. So we have to adapt accordingly.

Our restaurant at the butcher shop which is now in its 7th year, ‘Le Beastro’ will take a pause from April 30th. It’s not a decision we made lightly, but it is the right decision financially for the whole business to be able to continue successfully.

Some staff changes have to happen and fortunately we are able to send some staff to our other location

Starting May 1st, Beast & Cleaver will be focusing on what we do best, which is being an excellent neighborhood butcher shop. That’s the core of what we always are. Friday night dinner at The Peasant will remain once a week only for now.

Some changes:
More grab-and-go and sandwiches.
Our famous dry aged burgers & smoked meats available daytime of weekends (stay tuned)

The general public seems to be shifting back towards cooking at home and we’re here for it. We’ll make sure whatever you’re cooking is worth every bite.

To our staff who’ve been with us through all of our changes, thank you. To our guests — we’re not going anywhere. We’re just getting back to our bones.

Aren’t small businesses the heart of a neighborhood and aren’t they the places that make you smile???
