A bill to shrink Washington's workweek from 40 hours to 32 died in committee this year. Mexico just locked in a 40-hour workweek by 2030, down from 48, with no pay cuts allowed.
Neither one is a restaurant law. But both are signals.
Here's what's worth noticing right now: the operators already offering better schedules and more predictable hours aren't doing it to get ahead of a future mandate. They're doing it because it's working today, while good people still have options in this job market.
That edge does not go away when the market shifts back. If you've already built a staffing model that can flex, you're ahead. If you haven't, this is the moment to start, before it stops being optional.
