We had so much fun cooking last Friday with the wonderful Rue Dauphine Paris in our Seattle-area showroom! Her lemon madeleines were light, airy, with just the right touch of lemon. It’s always a joy to connect with Lacanche owners and celebrate a shared love of cooking.
Lemon Madeleines
Recipe by Rue Dauphine Paris

2/3 cup salted butter (plus more for the greasing pan)
2 tablespoons fresh lemon juice
2 tablespoons lemon zest
1 1/4 cups sugar
4 eggs at room temperature
Pinch of kosher salt
1 3/4 cup all purpose flour
1 teaspoon baking powder
Powdered sugar for dusting

Melt butter in small saucepan, add lemon zest, lemon juice then set aside to cool slightly. In electric mixer cream eggs, sugar and salt on medium speed for 10 minutes until thick and pale yellow color. Sift flour and baking powder in small bowl. With mixer on low, slowly add flour mixture and butter lemon mixture, alternating ingredients until just combined, keeping the batter light and airy. Refrigerate for 2 hours or best overnight.

Preheat oven to 375 degrees. Brush Madeleine pan with melted butter. Fill each mold with about a tablespoon of batter filling the mold by two thirds. Bake for 9 minutes. Let cool slightly, dust with powdered sugar. Best eaten immediately. Bon Appetit!

The French gñteau au yaourt — “yogurt cake” is a classic children’s cake in France because the yogurt container becomes the measuring cup for the whole recipe.

It’s simple, tender, and lightly sweet — perfect with berries, lemon, or just plain.

French Yogurt Cake (using one 5 oz yogurt container)

Ingredients

Use the empty yogurt container to measure everything after pouring the yogurt out.

* 1 container (5 oz) plain yogurt
* 2 containers sugar
* 3 containers flour
* 1/2 container neutral oil (sunflower, avocado, or light olive oil)
* 3 eggs
* 2 teaspoons baking powder
* 1 teaspoon vanilla
* Pinch of salt

Optional additions

* Zest of 1 lemon or orange
* Fresh berries
* Chocolate chips

Instructions

1. Heat oven to 350°F (175°C).
2. Grease an 8-inch round cake pan or loaf pan.
3. In a bowl, mix yogurt, eggs, sugar, vanilla, and oil.
4. Stir in flour, baking powder, and salt until smooth.
5. Fold in lemon zest or berries if using.
6. Bake about 30–40 minutes until golden and a toothpick comes out clean.
7. Cool slightly and dust with powdered sugar if desired.
