🇬🇷 Greek Meatballs

Ingredients:
• 1 lb ground beef or ground chicken
• ¼ cup grated red onion
• 2 cloves garlic, minced
• ¼ cup fresh parsley, finely chopped
• 2 tbsp fresh mint, finely chopped
• ⅓ cup breadcrumbs
• 1 egg
• 1 tsp dried oregano
• ½ tsp cumin
• 1 tsp salt
• ½ tsp black pepper
• 1 tbsp olive oil

Directions:
1. Add all ingredients to a large mixing bowl and gently mix until just combined.
2. Roll into evenly sized meatballs.
3. Pan: Heat a little olive oil over medium heat and cook, turning occasionally, until browned and cooked through, about 8–10 minutes.
OR
Oven: Bake at 400°F for 18–22 minutes, or until cooked through.
4. Serve with tzatziki, warm pita, a Greek salad, or over rice.

Save this one for the week ahead! 🥗✨ Crispy chickpeas are the PERFECT salad add-in when you want a little extra crunch and they’re seriously addictive!

🫘 Easy Crispy Chickpeas:
• 1 can chickpeas, drained & rinsed
• 1 tbsp olive oil
• ½ tsp garlic powder
• ½ tsp paprika
• Salt & pepper to taste

Pat the chickpeas really dry, toss with olive oil + seasonings, then spread them out on a baking sheet.

🔥 Bake at 400°F for 25–35 minutes, shaking the pan halfway through, until golden and crispy!

Toss them on salads, bowls, soups, or just snack on them straight from the pan. 👏

Crispy, easy & SO good. Save this for your next meal prep day!

• 1 tsp salt
• ½ tsp black pepper
• 1 tsp garlic powder
• 2 tbsp olive oil
• 2 tbsp butter
• 4 cloves garlic, minced
• 1 cup heavy cream
• ½ cup chicken broth
• ½ cup grated Parmesan cheese
• 1 tsp Italian seasoning
• 1 cup sun-dried tomatoes
• 1 bunch of parsley or basil
• Fresh basil or parsley, chopped (optional, for garnish)

Instructions
1. Season the chicken
• Pat the chicken dry.
• Season both sides with salt, pepper, and garlic powder.
2. Sear the chicken
• Heat olive oil in a large skillet over medium-high heat.
• Cook chicken for 5–7 minutes per side, until golden and cooked through (internal temperature of 165°F/74°C).
• Remove from the pan and set aside.
3. Make the sauce
• Reduce heat to medium.
• Melt butter in the same skillet.
• Add garlic and cook for 30 seconds until fragrant.
• Pour in chicken broth and scrape up any browned bits.
• Stir in heavy cream, Parmesan, and Italian seasoning.
• Simmer for 3–5 minutes until slightly thickened.
4. Add vegetables
• Stir in the sun-dried tomatoes.
• Add spinach and cook until wilted (about 1 minute).
5. Finish
• Return the chicken to the skillet.
• Spoon the sauce over the chicken and simmer for 2–3 minutes.
