Monday Munchies!! 🦐🍤🥔🧅
Someone mentioned low country boil and had shrimp on my mind!!
To make a Leroy’s Low Country Boil, simply replace your seasonings (yes, even the Ol Bay) with Leroy’s Original and cook as usual!
We had a similar (basically the same) dish recently and it was delicious!
We left it out, but corn and/or any other meat/veggie you like in your low country boil could also be added to today’s dish.
Leroy’s Low Country Shrimp
Serves 3-4
Ingredients:
1 pound medium shrimp
1 smoked sausage
1 pound petite yellow or red potatoes
1 large onion (I prefer Vidalia.)
1/4 cup butter
4 cloves minced garlic
1 tablespoon Leroy’s Original
Directions
Preheat smoker (or oven) to 400°.
Lightly oil baking sheet.
In a pot of boiling salted water, cook potatoes until just tender, about 10-13 minutes. If using corn add in for the last 5 minutes; drain well.
While potatoes are cooking, chop onion and cut sausage into 1/4-1/2 inch slices, set aside.
Mix melted butter, garlic, and Leroy’s Original in a small bowl.
Place meat and veggies in a single layer onto prepared baking sheet.
Pour butter mixture over the top and gently toss to combine.
Place into oven/smoker and bake for 12-15 minutes, or until the shrimp fully cooked.
Serve immediately and enjoy!
