Our sweet little flock of Khaki Campbell ducks are laying! Duck eggs are in stock now in the farm store- swing by, grab a half or full dozen and see the flock while you’re here!

We know many of you are dedicated fans of our beautiful, multicolored chicken eggs, but there are so many reasons to add duck eggs to your baking, frying, scrambling rotation.

Duck eggs are larger and have a higher yolk to white ratio than chicken eggs. Their big ol’ yolks make them great for baking super moist cakes and brownies.

They’re high in protein, omega-3s, and contain up to 50% more vitamin A than chicken eggs. A serving of duck eggs even provides half of the daily recommended dose of selenium, which is critical for thyroid function.

Our little flock of ducks will be over by the farm store all weekend- know your farmer, know your food, know your ducks!

Have we got a treat for you! Our very own farmer & chef Jared wrote up a sweet little recipe for braised pork belly and was kind enough to share it with the world. Pork belly is in stock in the farm store now! Swing by to grab a piece and make pork belly ramen for your friends this weekend, or eat it all yourself 😊 😋

Pork Belly Chashu

1 lb skinless pork belly
1 cup soy sauce
1 cup Mirin
2 cups water
1 inch k**b fresh ginger
2 green onions
2 cloves garlic
2 whole star anise

Sear pork belly on medium heat in sauté pan to render fat and get color. Drain rendered fat and add remaining ingredients. Bring to a simmer then cover and braise for 45 to 60 minutes. If liquid is less than halfway up pork belly top off with water. Once tender chill in refrigerator for 3 hours or preferably overnight, submerged in braising liquid. Belly can be sliced and seared to reheat. Braising liquid can be used as a sauce.

Adventures in egg collecting 🍳 💕

Just a few more days until the chickens head out to pasture for the season! Enjoying the chaos of the barn until then.

For those who are curious- the geese are not intent on setting on any eggs just yet. Later in the spring when they’re ready, the few who decide they want to raise goslings will be doted on by us while they hatch a few eggs and the legacy of our crazy little flock will continue. For now, we have goose eggs for sale in the farm store!

Big week for the ewes and their bellwether Billy Ray- they’ve been shorn! Every March swings by and works his shearing magic, ensuring the ewes are comfortable when the temperature starts to rise (which will be sometime soon we hear??)

They’re all looking gorgeous and naked and ready for lambing next month. If you see them around the farm be sure to tell them how beautiful they look. And a huge thank you to Aaron for the incredible work you do!

For those wondering, we don’t sell their wool! We primarily raise Dorpers, a breed of hair sheep whose coats are too short and coarse for spinning or felting. Many of our sheep will shed their wool off naturally and don’t need shearing!
