It’s chicken time baby!!! Our chickens are delicious whole, parted out or spatchcocked & grilled or roasted! Spatchcocking is essentially butterflying the bird, and it’s really pretty easy! Swipe through for visuals and scroll down for a how to!
Start by flipping the bird (hehe) so its breast side down. Then cut out the backbone by cutting down both sides of the spine. Be sure to use nice sharp kitchen shears for this!
Then flip the chicken over so it’s breast side up. Press down firmly to crack the wishbone and flatten the bird out. You can also cut the wishbone out with a knife if you want!
Finish by tucking the wings under the breasts so they don’t burn!
Be sure to save the backbone to make stock later and enjoy your chicken! Fresh chickens are available in the farm store at Kinderhook Farm all weekend! See you soon! 💕
