Welcome back to fast Fridays, a series of quick dinners to feed your family fast without relying on take away.
This week has been huge, we are renovating our bathroom and the children are almost at the end of term 3 so we’re all in a constant state of exhaustion. Quick easy meals are all I can manage.
This one hits the spot. And whilst it initially may have looked like it failed, we got it flipped in the end. And cooking for your family doesn’t need to be fancy. It’s good food, into your bellies so you can catch your breath.
Serves: 4
1 large zucchini grated, juice squeezed
2 bunches asparagus, trimmed and chopped
3 eggs
250g feta, crumbled
¾ cup plain flour
1½ teaspoons baking powder
2 tbsp chopped dill, chopped
¼ cup flat-leaf parsley, chopped
Zest of 1 lemon
sea salt and cracked black pepper
1 tbsp olive oil
To Serve:
Tomatoes & cucumber & dip (optional)
Add all ingredients to a bowl and combine.
Place a frypan on medium high heat and add the olive oil.
Pour in batter and smooth to the edges. Cook for about 5 minutes and then, with the best of intentions, flip that thing and cook for another 5 ish minutes on the other side (until batter is set in the middle)
Serve alongside whatever you have in the fridge, I used tomatoes, cucumber, sweet potato dip and chorizo but you do you, it’s a Friday night, keep it simple.
❄️This is also sensational cold the next day! ❄️
