These are our steadfast tin soldiers

Cold stabilisation is an important part of modern wine making. Typically wines would be refrigerated to sub-zero temperatures for many weeks to accelerate the precipitation of tartrates out of the wine. This is so you won’t see “wine diamonds” in the bottom of your bottle.

Because we focus on minimising our environmental impact throughout our winemaking practise, we don’t want to use heaps of energy to process our wine. Fortunately we live in one of the coldest parts of Australia – so instead we leave our wines outside through winter and use the super-cool temperature to help with cold stabilisation.

Its not quite as effective as refrigeration, so you will probably still find a few diamonds in our wines, but of course that doesn’t affect their quality in the slightest. So next time you find some diamonds in your bottle of Two Bud Spur you can feel good knowing your doing your part to help our planet.

Giving back to the soil!
Soil health is one of the most important elements of growing quality grapes.
During winter we mulch all the prunings so that they compost quickly and return their nutrients to the soil. This helps feed the vines for the next vintage.

As we work our way through pruning the vineyard we’ve been marvelling at the amazing character in our vines which tell the tale of years of the growth cycle.

Our vines were planted thirty years ago. As mature vines they now produce concentrated and complex flavours which translate to exceptional wines.

It’s been so rewarding to have been on this journey with them. đŸŒ± 🍇

I think Dusty is trying to tell us that the current release Pinot is just about gone.

Might be time to think about which one to release next
