Produced fresh from “The Farm” at Kin Kin in the Noosa Hinterland, our grass fed natural beef comes from steers (that’s the term for boy cattle without balls!) grazed on the rich pastures of this ex dairy farming region. Using rotational grazing, low stress handling techniques, timely periodic health interventions (to ensure optimal health) and regular interaction it enables our steers to grow in
a great natural environment. This shows in the quality of beef produced in our end product. Steers are bought from fellow beef producers locally in most instances, where we know about the breeding and livestock management systems. In some instances, steers are also bought from the local Gympie sale yards. Most are bought at approx. 200-250 kg live weight and then grazed until they reach 500kg live weight. Most will be about 24 months old by the time they are ready to be processed. The steers are then sent to the local processing plant (Nolans meat works) and then onto to one of our local fantastic butchers in either Gympie or Cooroy who packages them into a range of cuts. The meat is sold in ¼ or 1/8th beast lots - a 1/4 is usually about 60-70kg - so you need some good freezer space. We then arrange for the pick-up/delivery of your meat and then it is up to you to package the meat into portion amounts for keeping at home. What do you get in a quarter of beef? Roasts, corned beef, steaks (rib fillet, t-bone, y-bone, round, BBQ), sausages, mince, Osso bucco, shin, chuck. That gives a variety of oven, stovetop, BBQ and slow cooker meals. You also receive meat bones in the quarter to use in making stocks/sauces or you can be super nice to your dog and feed them to it! If you are struggling to know how to cook a certain cut we can even send you a nice recipe!! What sort of cost? Prices obviously vary due to seasonal conditions and market forces. We do however know that our prices are well below retail meat price rates and below the bulk butcher rates for similar quality meat. Currently it is $14/kg.(August 2022).
