ROASTED BROCCOLINI - A simple side dish that's big on flavour.

Broccolini is one of the easiest vegetables to cook and a great way to add something green to the dinner table. Roasting brings out its natural sweetness while giving the florets a delicious crispy finish.

Perfect served alongside roast chicken, steak, fish or your favourite weeknight meal.

Prep Time: 10 mins
Cook Time: 15 mins
Serves: 4

INGREDIENTS
3 bunches Aumanns Broccolini
1 tbsp olive oil
½ tsp garlic powder
Sea salt and cracked black pepper, to taste
Lemon wedges, to serve (optional)
METHOD
Preheat oven to 220°C.
Trim the bottom 2cm from each broccolini stem. If any stems are particularly thick, slice them lengthways so they cook evenly.
Place the broccolini onto a baking tray. Drizzle with olive oil and sprinkle over the garlic powder, salt and pepper.
Toss well to coat.
Roast for 10-15 minutes, or until the stems are tender and the tops are lightly crisp and charred.
Serve immediately with a squeeze of fresh lemon if desired.
A LITTLE TIP: For an extra flavour boost, sprinkle with shaved parmesan just before serving.
