White sauce pasta with chicken fingers, always a quick and easy meal to make for the kids. Sautee minced garlic in olive oil, then add minced onion & once browned, add butter, then flour to make a roux. Add in chicken stock or water, then added 3 types of shredded cheese (mozzarella, sharp cheddar & marble), then add some cream or milk, with garlic herb seasoning & some Italian seasoning, and black pepper. Once starts to boil, add in al dente cooked pasta, rotini in this case and stir for a few minutes before turning heat off. Residual heat will continue cooking it for another 5 minutes and sprinkle grated parmesan cheese in then. I don't put milk or cream to thicken roux because I don't want sauce to curdle, so I add it in near end & for parmesan, I learned from Cooking with Lidia on TV to only sprinkle parmesan after heat is off and it makes sense because then it'll become creamy instead of separating.
