Sweet & Sour Chicken 🍍
Crispy golden chicken tossed with peppers, onions and pineapple in a sweet, tangy and slightly spicy glossy sauce. Perfect with fried rice.
Ingredients:
For the chicken
* 4 chicken breasts, cut into small cubes
* Soy sauce, as needed
* Black pepper, to taste
* Salt, to taste
* 1 egg
* Cornstarch, as needed
* All-purpose flour, as needed
* Water, as needed
* Oil, for frying
For the sweet & sour sauce
* ½ cup ketchup
* ½ cup plum sauce
* ½ cup water
* 2 tbsp Chinese chili sauce
* 2 tbsp rice vinegar
* 2 tbsp sugar
* 1 tbsp soy sauce
For the stir-fry
* 1 onion, cut into cubes
* Minced garlic
* Red and orange bell peppers, cubed — or any colours you like
* Pineapple chunks
* Cornstarch slurry, as needed
* Spring onions, for garnish
Method
1. Prepare the chicken.
Add the cubed chicken to a bowl with soy sauce, black pepper, salt and egg. Add cornstarch and flour and mix well. Add a little water as needed to make a light batter that gives the chicken a thin, even coating.
2. Fry the chicken.
Heat oil and fry the chicken in batches until golden, crispy and cooked through. Remove and set aside.
3. Make the sauce.
Mix together the ketchup, plum sauce, water, Chinese chili sauce, rice vinegar, sugar and soy sauce. Set aside.
4. Stir-fry the vegetables.
Heat a little oil in a wok or large pan. Add the cubed onion and minced garlic and stir-fry briefly. Add the bell peppers and cook until slightly tender but still crisp. Add the pineapple and toss together.
5. Add the chicken.
Add the fried crispy chicken to the vegetables and toss everything together.
6. Add the sauce.
Pour the prepared sweet & sour sauce over the chicken and vegetables. Toss well and cook until everything is evenly coated and the sauce is bubbling.
7. Make it glossy.
Add cornstarch slurry as needed and cook until the sauce thickens and becomes beautifully glossy.
Serve immediately with fried rice and garnish with chopped spring onions.
