A good day to you all! David here, your Link Haus representative, back with more sausage-y news and happenings. This week we've got four yummy flavours back on the slate: the much-requested Festive Holiday Stuffing Sausage (just in time for Easter!); our Korean gochujang-infused chicken variety, King Taejo's Decree; the northern Thai curry delight that is Chiang Mai One And Only; and our humble but delectable Polish farm sausage, Na Farmie! Details below.
First of all, though, some events this weekend we need to shout about. On Saturday you can find us at the (now extended) Terra Greenhouse Hamilton Winter Market from 10am-3pm. Only a couple weeks left of that one, I'm afraid, but we've been having a jolly ol' time there.
Then on Sunday it's time for the Gluten Free Goodness Expo Mississauga edition, at the Small Arms Inspection Building, from 10am-4pm. Lots and LOTS of amazing GF food purveyors there, and we're always happy to be in the mix with both frozen and grilled products. Meanwhile north and east a little bit we'll also be at the Indoor Uxbridge Farmers Market from 10am-3pm at the Uxbridge Arena.
And don't forget, the Montgomery's Inn Farmers Market every Wednesday from 2-6pm as well.

Festive Holiday Stuffing Sausage is BACK for Easter!
Yes, we've had a couple requests for this seasonal flavour that we usually only do for Thanksgiving and Christmas, so we decided to do a mini run to make some happy faces. :D
With pork, apple, dried cranberry, sage, savory, roasted garlic, onion and more, this sausage crumble may just steal the show at your next Holiday get together! Just fry it up and mix with croutons, or integrate it into your family stuffing recipe, and make that bird sing! Also makes a great breakfast sausage option if made into patties, or just add leftover stuffing to an omelet.

King Taejo's Decree
Korean gochujang chicken sausage with pickled onion, Korean Maesil (green plum syrup), sesame, garlic, and more. Gochujang is one of the quintessential sauces in the Korean culinary pantheon. A long-fermented chili pepper paste with a savoury, sweet, not-too-spicy profile. Popularized after the soon-to-be crowned King of Joseon (thereupon named King Taejo) became enamoured with gochujang after tasting it, and demanded it be served to the royal family once he ascended to the throne.
(100% Chicken in beef-derived collagen casing. Contains garlic, onion, sesame, and soy.)
Suggested Side Dish Pairing: Jasmine rice with braised or pan-fried bok choi, finished with toasted sesame seed and crispy onions.
Suggested Drink Pairing: Go all in with the Korean vibe and pick your favourite fruit flavour of Soju, the country's most ubiquitous (and infamous) libation. Over ice, or as the base for a spritzer.

Na Farmie
Feel like you're "na farmie" ("at the farm") gazing out over the rolling hills of the Polish countryside with this wiejska kielbasa, or 'rural sausage'. Marjoram, coarse cut garlic, mustard seed, coriander, and a splash of white wine bringing it home.

Suggested Side Dish Pairing: Sauteed red cabbage with onion, apple, and butter with mashed potatoes.
Suggested Drink Pairing: Try whipping up some kompot, the ubiquitous stewed fruit beverage of Poland and eastern Europe. Easy to make and a real crowd pleasure. Even better with a dram of chilled potato vodka on the side.

Chiang Mai One And Only
(Note: Available for pick up Friday midday)
A northern Thailand Sai Ua-style pork sausage with loads of flavour. Lemongrass, lime leaf, ginger, turmeric, and lots more, with a little kick of heat at the end. If you love Thai food, this one's for you!

Suggested Side Dish: White (or sticky) rice with cilantro and ground peanut. Or add it to a rice noodle soup (ramen!).
Suggested Drink Pairing: Hazy IPA, or Gewurztraminer.
