One Pan Portuguese Chicken and Rice

4-6 pieces of chicken (drumstick/thighs)
2 tbsp of pimento paste (sweet and/or hot)
1 tsp of smoked paprika
1 tsp of garlic powder
1 tsp of onion powder
1 tsp of dried parsley
Juice of 1/2 lemon
Salt and pepper for seasoning
1/4 cup of olive oil
1 yellow onion (finely chopped)
2 garlic cloves (finely chopped)
1 small carrot (cubed)
1/2 red peppers (cubed)
1 tbsp of tomato paste
1 1/2 cups of parboiled rice
1 cup of b**r
2 cups of chicken broth
Fresh parsley for garnish

In a large bowl marinate the chicken in 1 tbsp of olive oil, lemon juice, pimento paste, smoked paprika, garlic powder, onion powder, dried parsley, salt and pepper.
In a large pan, heat remaining oil on medium- high heat, and sear chicken for 3-4 minutes per side until golden. Remove and set aside.
To the same pan add onions and scrap any bits left over from the chicken. (Add a splash of water if needed)
Sauté for a few minutes then add garlic carrots and red pepper.
Squeeze in tomato paste and any leftover marinade.
Stir in rice and pour in b**r and chicken stock.
Lightly season with a pinch of salt (be mindful of the salt in your chicken stock)
Add chicken back in, cover and allow to cook for about 15 minutes or until liquid is completely absorbed.
Top with fresh parsley. Squeeze with lemon juice.
Enjoy 😊
