Cauliflower pan-fried with green chili, garlic, carrots and green peas, then finished with warm spices, fresh lemon juice and a touch of sesame oil. Simple, colourful and full of flavour.

Roasted Caprese

A warm twist on the classic—juicy roasted tomatoes, fresh mozzarella, sweet garlic confit, jalapeño, basil and balsamic glaze, served with crispy garlic sourdough.

Ingredients:
300 g cherry tomatoes
1 fresh mozzarella ball
20–30 garlic cloves
Fresh thyme and basil
Fresh jalapeño
Balsamic glaze
Sourdough bread
Olive oil, salt and black pepper

Method:
Roast the tomatoes with olive oil, thyme, salt and pepper at 500°F (260°C) for 12–15 minutes.

Cover the garlic with sunflower oil and cook gently over low heat for 30–40 minutes. Use the flavorful oil to toast the sourdough.

Arrange everything on a plate and finish with fresh basil and balsamic glaze.

Egg Salad Mini Pitas

Simple, creamy and full of flavour.

Mash together 6 hard-boiled eggs, 2 finely chopped pickles, 3–4 tbsp green onion, 1 tsp fresh dill, 2 tbsp crispy fried onions, 1 tsp Dijon mustard and 4 tbsp mayonnaise. Season with salt and black pepper, then fill your mini pitas.
