Mold! Let’s talk about it. It’s easy to get caught up in the bad connotation the word “mold” has, but in some circumstances it is quite positive. Our salami is dried in a room that is living and breathing with many molds and microorganisms, and the goal is the always keep the room clean enough and within the correct parameters that these positive molds can take hold. They do a multitude of different things, from combatting bad bacteria to even providing flavour (similar to a Brie rind). Here you can see where it has formed to my finger print after hanging it up, why? I’m not totally sure, the extra moisture/oil from my skin most likely gave a slightly more desirable environment for it to start.

New item: Haus Sausage Co.'s delicious curry sausage rolls. Admittedly, about half of our first shipment got used for "staff testing", though now that our staff are good and full, we're ready to get the rest of them out. Available already cooked from our deli, or take & bake from our freezer.
Building the hype! Welcome back to our next Feature Friday! Today we are featuring Haus Sausage Co!

Haus Sausage Co. was established in 2017 when two like-minded friends decided to turn their dreams into a reality. Their immaculate and bustling shop is filled with an impressive display of anything a meat-lover’s heart could desire from bacon and sausages to foie gras parfait! When speaking with owners Kyle Clayton and Shane Harwood, here is what we found out about how it all started.

“We worked together at a small sausage shop doing the same sort of style of work, and spent plenty of hours off the clock dreaming and scheming-the rest is history!"

"We always had this passion project of starting a sausage company and in 2017 the stars aligned, haphazardly, and we started sneaking in a market on our days off and kept making that work for a couple years until we got here." Kyle said referring to their store front on Dupplin Road.

"It was a nice slow, organic road through the market which was really nice when we didn’t have a kitchen…(the market) really remains one of our driving forces behind sales and I don’t think we’ll ever leave the market scene.”

Haus uses products from other market vendors in their creations as well.

Kyle and Shane established their shop on Dupplin Road in 2019 and managed to grow their business during the pandemic through their creative variety of offerings and consistently impressive products. Haus Sausage co also offers baked goods, charcuterie boards, a multitude of cured meats, cheese, as well dry rub seasonings, hot sauces, preserves and more!
Recently they have started offering 🍛✨Sunday Dinners✨ where you can pick up a take out dinner complete with dessert to enjoy at home.

You can find Haus Sausage Co. vending at the market every Saturday or you can visit their amazing shop located at #4 - 515 Dupplin Road Victoria, BC
If you show up early enough you can snag some bread from Haus Sausage Co. They are in the Garry Oak Room and they go fast!
