I started making vegan cheese back in 2016. 10 years of trying recipes, testing ingredients and tasting A LOT of vegan cheeses.

And honestly, so many were bland. They were missing that depth of flavour I was looking for.

One ingredient that made a real difference in my cashew cheese ? Sauerkraut juice.

I've tested my recipes with and without it, and the difference is remarkable. It brings a tangy, savoury depth that makes the flavour so much more interesting.

It's one of the little details behind the handmade cashew cheeses I make here in Tallinn, Estonia 🌱

If you've tried my cheeses, did you guess they contained sauerkraut juice ? 👀

La "sauce béchamel" is a traditional sauce used in so many French dishes. I grew up with it, and it's one of my favourite sauces. Super creamy and super easy to make: butter, flour and milk. Yes, that's it.

When I stopped eating dairy, I had so many failed attempts because it kept tasting like thick, watery flour 🫠

A few days ago, I made meat-free lasagna using soya mince from Bon Vegan . Absolutely delicious! I soak it in water with soy sauce and liquid smoke, then use it just like ground beef 🤝

I decided to top my lasagna with béchamel sauce with a twist, and jeez, it was a good idea.

First, melt your margarine in a saucepan over medium heat and let it cook until it turns golden and develops a delicious nutty aroma. Keep an eye on it so it doesn't burn!

I usually do everything by eye, but for a classic béchamel, you can use 40 g margarine, 40 g flour and 500 ml liquid.

Add the flour to your golden margarine and whisk until you get a smooth paste. Cook for a minute or two, stirring constantly. Slowly pour in your liquid while whisking to prevent lumps. Traditionally, you'd use milk, but I replace it with water. Yes, really! Keep stirring over medium heat until the sauce thickens.

Add salt to taste and, if you like, a little ground cardamom.

But this time, I added a generous chunk of my own cashew cheese, "The Classic", available in my shop. And wow, I nearly ate a quarter of the sauce before it even made it onto the lasagna 🤣

I baked it until the top was golden. Absolutely delicious.

I'll definitely make this sauce again to eat with pasta.

Yes, just like when I was a kid: steamed cauliflower + béchamel sauce. Yum.

Save this recipe and let me know if you try it 😃
But have you ever tried béchamel sauce before ?

The best plant-based cheese in Estonia

02/10/2026

When I moved to Tallinn in September 2018, I had online workshops where I taught vegan cheese and vegan cuisine to French speakers, and I also had a YouTube channel where I shared about food, sustainability, etc, but also about Tallinn and Estonia !

You see a few clips from my YouTube channel 😁

I used to share a lot about my daily life here on Instagram, and so many people discovered Estonia in a way they didn't imagine. And fun fact, a few of them (that I’ve never met or personally known outside social media) came to visit Tallinn because of my stories 😝 I'm really proud of it 😎

8 years. I arrived here when I was 29. I’m basically spending my thirties in Estonia. What an incredible chapter. Can't wait to write the next ones.

Thank you, Estonia and Estonians, for welcoming me so warmly since the beginning ♥️

Thanks to all of you, friends and acquaintances alike, who make my life full of love, joy and laughter.

To the next years 🥂

(Now I'm crying 🤧)
