High up in the hills just north of Aix-en-Provence, away from the heat of the coast, you’ll find a set of ancient stone gates. Beyond them lies the Maison Saint Aix estate. Before Provence was rosé, it was white.
As early as the 10th century, monks were crafting wines from these marl-limestone slopes, and AIX White revives that lineage from some of the highest-altitude vineyards in the appellation.

70% Vermentino for aromatic intensity. 25% Sauvignon Blanc for precision. Harvested before dawn, pressed under 1 bar, fermented at 15°C in oxygen-free conditions. Every decision made in service of one thing: purity.
Pale straw, green-tinged. Citrus, white florals, a finish that doesn't quit.

This is Provence white winemaking at altitude, and at its best. 🍋
