We have always strived to provide variety in the Wilson & Morgan catalogue, but since our birth in 1992 one of the staples of our lineup has always been Caol Ila, which has never missed a year. The reasons are simple: Italy has always loved peated Islay whiskies, it’s a distillery with a very high and constant quality, and it’s excellent both young and old.

Recently Whiskyfun.com had a series of sessions in which several Caol Ila bottlings were tasted and rated, including three from Wilson & Morgan:

87 points: W&M543 Caol Ila 8yo Quercus Alba (48,0%)
88 points: W&M578 Caol Ila 2015-25 Sherry Finish Oloroso - 100 U.K. Proof (57,1%)
90 points: W&M94 Caol Ila 30yo 1980-11 Bourbon cask (58,8%)

Apart from the obvious winner, the lovely 30yo from many years ago, also the younger and very affordable expressions currently on the shelves have achieved excellent scores: a confirmation that Caol Ila can be great even at a relatively young age, especially with our creative wood choices for maturation.

But, statement aside, what is the difference between all the Caol Ila bottlings we have released? We’ll try to explain!

Traditional oak: entirely matured in refill bourbon casks, they are usually the smokiest and driest (especially the young ones), with little influence from the wood. Very little sweetness, no wine.
Bourbon cask/finish: as the name says, matured or finished in first fill bourbon casks, for a richer, fruitier, sweeter touch
Virgin Oak: finished (usually for 2 years) in new toasted oak casks, which give a strong note of vanilla, liquorice and tannins. Usually more restrained in smokiness, but with a very robust body.
Quercus Alba: a special kind of Caol Ila, made from a vatting of Bourbon and Virgin Oak casks… to marry the best of both!
Sherry Finish: finished in Oloroso or Pedro Ximenez casks, either first fill or second fill. According to the length of the finish, they can simply add fruity and leathery notes to the peat, or markedly winey notes, coffee and cocoa.
100 UK Proof: combined with any of the above, a special release at the ABV of 57.1%.

Yesterday’s Wilson & Morgan masterclass at the Milano Whisky Festival was—once more—a tremendous success. One of the very first sessions to sell out, it confirms year after year the passion and loyalty of our fanbase.

If you blink, you miss it… and this year was no exception. Expertly presented by our Brand Ambassador Luca Chichizola, the tasting offered a deep dive into some of our most distinctive releases. The enthusiasm in the room was palpable, and we couldn’t be more grateful for the constant appreciation from whisky lovers.

A heartfelt thank you also goes to our Italian distributors, Fine Spirits, for their invaluable support throughout the event. The mature age of 18, and a few words on grain whiskies

Our last newsletter was dedicated to the wonders of our Glen Moray 18yo 2006-24 Sherry Finish Oloroso (54,8%) W&M566, which had just received excellent scores on Whiskyfun (89 points) and Ci**rs Lover (90 points). It’s not the only recent 18 years old whisky in our catalogue to have conquered the noses and palate of some very influential tasters: after all, a long time ago, 12 years was considered very respectable already, and 18 years was – for many distilleries – the pinnacle of their output, the age statement reserved to the “luxury” bottlings. Many legendary whiskies of old were indeed 18 years old, which not only psychologically represents “maturity” for human beings too, but actually a moment at which many whiskies reach the perfect balance between youthful vibrance and the complexity of age.

We have another 18 years old bottling that has received a very positive score on Whiskyfun recently (88 points, the best of the session): Invergordon 18yo 2006-24 Fully matured in Sherry Wood W&M570 (62,3%).

What makes it unique is that it’s a grain whisky! Among whisky connoisseurs, the lion’s share of the interest has always traditionally been concentrated on single malts. Too often, single grain whiskies have been neglected: only made by a handful of distilleries, and usually not meant for bottling as standalone whiskies, but rather to be used very young as a component in many popular blends.

But what is grain whisky? Well, very simply, it’s a spirit that is made in a column still rather than in a pot still, and from a variety of cereals (wheat, maize, and malt too). It’s usually lighter in body than single malt whisky, and that’s why it’s used in blends. We have always been advocates of the quality of a good grain whisky: if carefully matured, and it usually requires a longer time than for single malts, they can be stunning too. And it seems that our Invergordon, at 18 years of age, is truly delicious!
