🔥🐖 Lil’ Rascal’s BBQ Has Been Quiet… But Definitely Not Gone! 🐖🔥

Well y’all… we owe you a little bit of an apology. 😂

We've been pretty absent on the social media side of things lately, and unfortunately, life has been doing what life does.

My primary job as a manufacturing engineer has been demanding a lot lately. More than I’d like to admit, I’ve even had to sacrifice some family time just to keep up with work. As much as I hate that, something had to give, and for a few weeks, that something was BBQ and social media.

We've still been busy doing what we love whenever we can, including this most recent smoke session that I somehow completely forgot to post about!

🔥🐖 The Lil’ Rascal’s BBQ Smoker Is Getting BUSY This Weekend! 🐖🔥

Looks like the smoker is going to be earning its keep this weekend! 😎🔥

We've got three different orders/smoke sessions lined up, with plenty of good stuff making its way onto the pit.

🔥 FRIDAY SMOKE

First up, we've got two customer orders getting knocked out Friday:

🥩 Brisket Flat + Rack of Ribs — one customer is getting a little bit of both!

🥩 Whole Brisket — and this one has a pretty special reason behind it.

We've got another family who apparently enjoys food just as much as the Lil' Rascal family does! 😂❤️ One of their kiddos is celebrating a birthday, and what better way to celebrate than having an entire brisket ready to enjoy throughout the weekend?

A birthday, a hungry family, and a whole brisket.

Sounds like a pretty solid weekend to us. 🎂🔥🥩

We're honored they chose Lil' Rascal's BBQ to help feed the celebration, and we hope that brisket makes that birthday weekend even more special!

🔥🐖 The Lil' Rascal Family Smoke Session — FINAL RESULTS! 🐖🔥

Well... that little family smoke session turned out better than we could've hoped! 😎🔥

We had a little bit of everything coming off the smoker, and man, there wasn't a bad bite in the bunch.

🥩 Wagyu Ribeyes — Our oldest Rascal's request, and these things were incredible. We went with a forward sear to build that beautiful crust while keeping all that juicy Wagyu goodness inside. Definitely a request worth making!

🐖 Brats — Momma Rascal requested them, so Momma Rascal gets what Momma Rascal wants. 😂🔥

Those two made up last night's dinner, and let me tell you... we were already off to a pretty incredible start.

But tonight was round two. 😎

🐟 Whole Salmon Filet — Sweet, savory, smoky, and covered in that signature glaze we've come to love. The combination of smoke and that sweet finish was absolutely on point.

🥐 Momma Rascal's Homemade Biscuits — Made completely from scratch and the perfect companion for tonight's spread. While Dad was busy playing with fire and meat, Momma Rascal was putting in work in the kitchen. 😂❤️

🥩 The Trisket — Our youngest Rascal requested the giant tri-tip, so we decided to give it the brisket treatment. Smoked low and slow like a brisket, this thing was OUT OF THIS WORLD. Tender, juicy, incredible bark, and packed with flavor from edge to edge.

So we ended up splitting this smoke session into two nights of family dinners, and honestly... that's a pretty good problem to have. 😂🔥

This is the part of Lil' Rascal's BBQ that we love the most. Sometimes the smoker is packed with customer orders, and sometimes it's just packed with food for the four of us.

Either way, the smoke keeps rolling and the family keeps eating.

🔥🐖 The Lil' Rascal Family Smoke Session! 🐖🔥

Not every smoke session is for orders. Sometimes the family just wants to eat! 😂

We've got a little Rascal Family BBQ going this weekend, and everybody apparently had their own ideas about what's going on the smoker.

🥩 Momma Rascal requested some brats, so brats it is!

🥩 Our oldest Rascal put in a special request for a couple of Wagyu ribeyes. Hard to argue with that one. 😎

🐟 We've also got a whole salmon filet making its way through the smoke.

🥩 And our youngest Rascal came through with the big request — a massive tri-tip that'll be getting the Lil' Rascal treatment.

It's always fun when the smoker gets fired up just for the family. No orders to worry about, no schedule to chase... just good food, good smoke, and the four of us enjoying the process together.

And honestly, that's a pretty big part of why we started Lil' Rascal's BBQ in the first place. ❤️

We'll get some pictures of the finished spread once everything comes off the smoker — assuming the Rascals don't beat us to it. 😂

🔥🐖 What a Weekend at Lil' Rascal's BBQ! 🐖🔥

First and foremost... THANK YOU!

This weekend was another great one for the Lil' Rascal's family, and we couldn't do it without all of your support.

Friday's smoke session included three racks of ribs: 🍖 Hickory (Meat Church) 🍖 Holy Cow (Meat Church) 🍖 Hail Mary (Meat Church).

And tomorrow we'll be sending out another three racks: 🍖🍖 Two Holy Cow 🍒 One of our Signature Black Cherry Sweet Twist.

We truly appreciate every order that's placed with us. Every message, every recommendation, and every customer gives us another opportunity to do what we love.

Of course... we couldn't help ourselves from sneaking in a few experiments this weekend too. 😎🔥

As soon as Meat Church announced their brand-new Garlic & Jalapeño Blanco seasoning, we knew we had to get our hands on it.

So naturally...
🔥 We seasoned a rack of ribs with it.
🍗 We also made Meat Church's Garlic Parmesan Smoked Wings recipe featuring the new seasoning.

And all we can say is...
WOW.

The Garlic & Jalapeño Blanco delivers everything we already loved about Blanco with an extra punch of roasted garlic and just enough jalapeño to wake up your taste buds without overpowering the food. It's bold, savory, incredibly balanced, and might have just earned a permanent spot in our seasoning lineup.

The ribs were fantastic.

Let's just say they disappeared a whole lot faster than they took to cook. 😂

🇺🇸🐖 The Lil' Rascal's Family Checking In! 🐖🇺🇸

Well... we looked up and realized it's been over a month since we've made a post!
Life has a funny way of speeding up sometimes. Between work, family, and everything else that comes with day-to-day life, our social media took a bit of a back seat through June.
The good news is... the smoker never stopped rolling. 🔥

We've still been filling orders, trying new recipes, experimenting with different cuts of meat, and spending weekends doing what we love—making BBQ for friends, family, and our customers.

We just haven't done the best job of sharing it with y'all!

So we figured we'd jump back in with a picture of the crew behind Lil' Rascal's BBQ, decked out in our red, white, and blue from the Fourth of July. 🇺🇸

This little business has always been about more than just barbecue. It's about spending time together as a family, learning new things, meeting great people, and sharing food that brings folks around the table.

As we head into the second half of the year, we've got some big goals.

🥩🔥 Brisket Experiment Complete 🔥🥩

The brisket experiment is officially in the books... and we'd call this one a success. 😎🔥

This weekend we separated the point from the flat and smoked them independently to see how everything would turn out.

The results?

🤤 Absolutely worth it.

The flat finished beautifully. It was a little strange slicing pieces that small compared to a traditional whole-packer brisket cook, but they turned out exactly how they were supposed to. Tender, juicy, and packed with that classic brisket flavor. Even the small piece that had to be trimmed off extra ended up being some mighty fine eating.

And then there were the burnt ends...

🔥 Sticky.
🔥 Smoky.
🔥 Messy.
🔥 Loaded with flavor.

They may not be the prettiest things we've ever made, but they more than made up for it in taste. Sometimes the ugliest BBQ is the best BBQ, and these little flavor bombs definitely fit that description.

From trimming and seasoning, to rendering down tallow, to tending the smoker all day, it was a long cook from start to finish. But that's just part of the deal.

Good BBQ takes time.

And when you finally get to slice into a brisket that's been on your mind all day, every minute of waiting feels worth it.

🥩🔥 Brisket Experiment Update #2 🔥🥩

We're officially on the final stretch of today's brisket experiment 😎🔥

The brisket flat has finished cooking and is now resting comfortably in the Rest EZ BBQ Blanket, doing what great briskets do best — taking a well-earned nap before slicing time.

Before it came off the smoker, the flat was looking incredible. The bark had set beautifully, the color was exactly what we were hoping for, and the smell alone was enough to make waiting even harder.

Meanwhile...

🔥 The point is still on the smoker.

After reaching the perfect stage of the cook, we cubed it up, seasoned it with a little extra love, glazed everything down, and sent it back out to the smoker to transform into brisket burnt ends.

The pictures posted with this update are from that stage of the process — right after cubing and glazing the point before it headed back out for its final trip through the smoke.

We've also got a mountain of brisket trimmings slowly rendering down into some liquid Texas gold. Nothing goes to waste around here.

At this point, the flat is resting, the burnt ends are soaking up that final layer of smoke and flavor, and we're getting very close to the best part of the entire cook...

🥩🔥 Brisket Experiment Update 🔥🥩

The prep work is done, the smoker is rolling, and the brisket experiment is officially underway 😎🔥

This morning we loaded up:

🥩 The brisket flat
🔥 The brisket point (future burnt ends)
🧈 A mountain of brisket trimmings

Everything was seasoned with Meat Church Holy Cow and is now settling in for a long, slow ride through the smoke.

The flat will be sliced up the traditional way, while the point is destined for a much sweeter fate — getting cubed up and transformed into brisket burnt ends later in the cook.

And let's not forget about all those trimmings. Nothing goes to waste around here. They're slowly rendering down into what BBQ folks affectionately call Texas Gold — rich, liquid brisket tallow that'll find its way into future cooks and help make good BBQ even better.

Now comes the hardest part of every smoke session...

⏰ Waiting.

Just sitting back, enjoying the smell of smoke rolling through the yard, and letting time do its thing.

We'll keep y'all updated as the cook progresses and hopefully have some beautiful bark and burnt ends to show off later today.
