The other day I posted “garlic scapes”. Some of you were wondering what in the world you do with those things or even what those things are? Garlic tries to reproduce in early summer by sending out a flower; this is the scape. We cut them off so the plant sends its energy to the actual garlic bulb that is growing in the soil below. Scapes, if cut early, are tender and have a milder garlic flavor that can be pickled, sautéed, used fresh in salads, used in soups, and all sorts of savory dishes. I chose to pickle a few jars, I chopped some up to freeze, which is very convenient, and I made some compound butter that I will use for sautéed veggies, on grilled steak and salmon, mashed potatoes - the possibilities are endless! I will cut the butter log into individual servings and freeze them for easy use.
