lal and cooking alongside some of the country’s most brilliant chefs, Keith built Aatma to honor India’s diverse regional cuisines while breaking every box Western diners try to put them in. This isn’t fusion, it’s evolution. Aatma’s menu draws on centuries of spice traditions, ancient techniques, and bold regional flavors, then reimagines them through a New England lens. Each spice is ground in house, no boxes,, just passion. Expect smoked dal that whisper of home, paneer with swagger, and chaat that bites back. Every dish carries memory, rebellion, and soul. Aatma exists to challenge the tired idea of what “Indian food” is supposed to be. It’s not about butter chicken clichés or curry stereotypes, it’s about storytelling through spice, history, and heart. Come hungry. Come honest. Believe the propaganda.

A couple of weeks ago, we filled a community fridge a few miles from the restaurant. No big plan, no announcement, just food and supplies where they were needed.

A couple days later, someone came into the restaurant and quietly left an envelope with $100 inside. We never excepted this kind act but we knew right away we didn’t want to keep it, we wanted to pay it forward.

So we turned that $100 into more than $100 worth of supplies, feminine products, personal hygiene items, and essentials that are often overlooked. Then we restocked the fridge again on our own.

It felt right to let that kindness keep moving.

Community isn’t built on grand gestures. It’s built on small, steady acts that ripple outward. One person fills a fridge. Another person adds to it. And together, something bigger takes shape.

To the person who left that envelope, thank you. We hope the care you showed continues to travel farther than any of us can see.

The community fridge is located at 404 Washington St, Brighton MA. We encourage you to show up and be a part of something so wonderful! We will see you there.

We’re closing out the year with a "Royal Rebellion." Chef Keith and the team has pulled from the deepest archives of Mughal history and Indian street corners to bring you three one-night-only specials.

THE LINEUP:
1. Lamb Shank Nihari: The King of stews. 25 freshly ground spices. Slow-braised until it surrenders. Served with fresh kulcha (like naan but better).
2. Chole Puri: Street-soul at its finest. Smoked ghee,chickpeas and crispy puri (fried bread) for that Delhi feel.
3. Kesar Shrikhand: A saffron-infused sweetened yogurt with a collision of texture and sweetness.

No dress code. No pretense. Just high-concept history served inside a brewery with beer that pairs to perfection.

NEW DISH. DEEP ROOTS. ZERO APOLOGIES.

This is General Rao’s Chicken, and it exists for a reason.

In 1911, at the Delhi Durbar, every Indian ruler was expected to bow before King George V.
Sayajirao Gaekwad III didn’t.
He gave a slight nod and walked on, a quiet act of defiance that rattled an empire.

That moment became the soul of this dish.

Crisp fried chicken, blistered and loud, tossed in a jaggery-vinegar-chili glaze with curry leaf crackle, toasted methi, and Szechuan peppercorn heat. Sweet at first. Sharp underneath. Built with posture. Built to refuse.

But this dish is also personal.

The idea was born from our sous chef Jeff, pulling from his early career working inside one of the largest American Chinese food chains, where General Tso defined an era. That foundation met Chef Keith Sarasin’s lifelong obsession with Indian flavor, history, and context, and instead of copying, we contributed.

This isn’t nostalgia.
It’s evolution.

Familiar enough to crave.
Different enough to remember.
And once it’s gone, it’s gone.
