Just in case you haven’t check out the newsletter from 7/31 yet, here’s a sneak peak! View the interview with Vanessa from Farmented, a producer of fermented goods whose mission is to repurpose “ugly” vegetables that would not otherwise be sold and consumed.

Here are the ingredients if you need to be enticed! Read the rest of the instructions on the 7/31 blog post!

*  3 lbs beets (about 6-8 medium or 4-5 very large), peeled and grated or cut into small matchsticks
*  1 medium yellow onion, diced
*  3 celery stalks, diced
*  5-6 cloves garlic, minced
*  ½ small green cabbage (about 1 lb), thinly shredded
*  2-3 Yukon Gold or yellow potatoes, diced into ½ inch cubes
*  1 cup crushed tomatoes
*  8 cups vegetable or chicken broth
*   bay leaves
*  1 tsp dried thyme (or 2-3 fresh sprigs)
*  2-3 tbsp chopped fresh dill, plus more for serving
*  2 tbsp butter or neutral oil
*  1-2 tbsp rice vinegar
*  sour cream
*  salt, black pepper, cayenne, paprika

Get to know our employees!

Ella is from Walla Walla, Washington, where she grew up on a small blueberry farm. She comes from several generations of agricultural workers, which has given her an appreciation for the care and effort required to produce the food we all need to live! With a degree in Environmental Studies, minor in Landscape Architecture and Food Studies, Ella is interested in design, food sovereignty, and working with the earth. During college, Ella worked for an organic farm in Oregon, and she also currently works at Chance Farm here in Bozeman. Ella is so excited to be at Fat Toads Farm Pantry!

Get to know our employees!

•Henry Groseclose•

Henry has been working in sustainable agriculture and conservation ecology for several years. From mushroom farming in New York City to conservation ranches in Eastern Montana, he loves working with the vegetation, substrate, and food systems that shape a region. He also works for Montana Conservation Voters and volunteers for a work trade at Chance Farm. In his free time he enjoys backpacking, reading, and has been getting into rafting and climbing.

Montana’s First Grocery Farm Stop is an Avenue for Supporting Montana Producers

Walking into Fat Toads Farm Pantry feels like stepping into a 1970s neighborhood corner store. The shelves are packed with artisan cheeses, freshly baked bread, seasonal vegetables, and an assortment of Montana- raised meats. Sunlight streams through the east-side windows, highlighting colorful flower bouquets. Sitting behind the register is Carly Brief, local resident and store owner. She can often be found talking with customers about the farmers she sources products from, chatting with vendors, or taking a few quiet minutes to work on her latest knitting project.

While Fat Toads Farm Pantry is new to Bozeman, Brief has worked in the food system for over a decade. In 2020, she moved to the area and took a job at Gallatin Valley Botanical, a diversified farm in the Gallatin Valley that raises animals and grows a wide array of vegetables. She began working in the fields on their vegetable crew and quickly transitioned into a managerial role.

That winter, she ran the Bozeman Winter Farmers’ Market, a position she held for three years that allowed her to build strong connections with local producers. During her time as market manager, she recognized both the demand for local food and issues with the current market structure, including increasing rental prices.

Brief went on to work at a local food wholesaler, where she identified barriers to local food purchasing for restaurants and chefs. After 12 years working throughout the food supply chain, she was ready to address these challenges and launch her own venture.

Brief opened Fat Toads Farm Pantry at 521 E. Peach St., Ste. C, north of downtown, in February 2026, offering the Bozeman community a permanent farmers market option…. *Continue to read online or in the magazine!*
