My dad wasn't a fancy chef, but his Sunday morning fried potatoes were legendary! 🥔 He never measured anything—just a hot cast iron pan, leftover potatoes, onions, and whatever seasoning he had nearby. What was the one cheap meal your dad made that you still crave?

Dad's Fried Potatoes:
- 4-5 russet potatoes, diced
- 1 large onion, chopped
- 3 tbsp vegetable oil or bacon grease
- 1 tsp seasoned salt
- ½ tsp black pepper

Heat the oil in a cast iron skillet over medium-high. Add potatoes and onions, season well, and let them sit untouched for 5 minutes to get a good crust. Toss and cook until tender and crispy all over!

Grandpa could make a feast out of absolutely nothing! He used to make this Depression Era Peanut Butter Bread when groceries were tight. No yeast, no eggs, no butter in the batter—just pure magic. We still eat it warm with a little butter on top! ❤️

Grandpa's Peanut Butter Bread:
- 2 cups all-purpose flour
- ¼ cup sugar
- 4 tsp baking powder
- ½ tsp salt
- 1 ⅓ cups milk
- ½ cup creamy peanut butter

Mix dry ingredients. Blend milk and peanut butter, then stir into the dry mix just until moistened. Bake in a greased loaf pan at 350°F for 45-50 minutes. Let it cool before slicing!

Summer is entirely too hot to turn on the oven! 🍑 This 3-ingredient Peach BBQ Chicken uses the slow cooker, takes 2 minutes to prep, and my kids absolutely devour it over a bowl of rice. Cheap, easy, and sweet-and-tangy perfection!

Peach BBQ Crockpot Chicken:
- 4 boneless skinless chicken breasts
- 1 bottle of your favorite BBQ sauce
- 1 jar of peach preserves (or canned peaches drained)

Place the chicken in the crockpot. Mix the BBQ sauce and peach preserves together, then pour over the meat. Cook on LOW for 6 hours or HIGH for 3 hours. Shred with two forks and serve on buns or over rice!

Don't lose this recipe! 🍎 My Grandpa used to make these sweet, sticky, cinnamon-coated fried apples for Sunday breakfast, and it is the best smell in the world. You only need 4 ingredients, and they taste incredible over pancakes, ice cream, or just straight out of the skillet!

Grandpa's Fried Apples:
- 4 Granny Smith apples (sliced)
- 1/4 cup butter
- 1/3 cup brown sugar
- 1 tsp cinnamon

Melt the butter in a cast iron skillet over medium heat. Add the sliced apples, brown sugar, and cinnamon. Stir gently and let them simmer until the apples are tender and the sauce turns into a rich, sticky syrup. Serve warm!
