Its Recipe Time!
Sweet and Sour Meatballs...
I know I've posted this one before, but its a favorite around here and I want everyone to try it😊
The Recipe is pretty basic and simple for any level of cook...
I like to add my own spin to it, though.
•I always double the Recipe
•I make my own meatballs...
1 lb. Ground beef
1 lb. Ground Pork
3-4 eggs
About a cup of panko bread crumbs (you can use regular, also)
I also added a bit of Sweet Thai Chili sauce for a little extra flavor.
Salt and pepper... If you want, you can also add a few dashes of garlic and onion powder.
Mix, ball, and pop in the oven @350 for 25ish minutes... Until browned and cooked through.
Here, you can freeze them and use them at a later date, or use them right away.
•I like to skip the green peppers and add extra red... They're just sweeter😊
•I also had to make my own Sweet and Sour sauce, because I forgot to buy a bottle!
When I was putting everything into the pot I added a few squirts of Ketchup, a little Apple Cider Vinegar, and little extra Brown Sugar. Then I put the pineapple juice from 2 cans in a separate bowl and added a few tablespoons of corn starch. Mix and add to the pot.
•Here's where you can fill your crockpot, or a pot on the stove (because you forgot to make dinner earlier, and now the natives a restless... This is my life🤦♀️)
I cut the veggies and threw everything in a Dutch oven, while the meatballs were baking. Heated it all through, and added the meatballs.
Put the pot in the oven and 30ish minutes later you have dinner ready... The rice can cook while the rest is in the oven!
I know this looks like a lot... But once you understand that cooking doesn't always have to follow a recipe precisely, you feel a bit more free to do what you want and to make it your own.
Also... When you forgot to buy the ingredients you need, sometimes you HAVE to get creative🤣
Also... Homemade meatballs are so much better than the frozen ones you buy in the freezer section... And buying your meat from your favorite farmer at the farmer's market is a huge bonus😉😅
