This was one of my favorite vendors at the Elizabethton Farmers Market! I bought croissants every week. All her stuff is authentic and delicious!

In 2026, The French Honeybee has great plans!!

It will open its own shop, most likely downtown Johnson City!

We will serve freshly baked croissants, madeleines, cannelés and éclairs, as well as baguettes and brioches.

We are very excited to start this new adventure!!
It will be a family business and it will keep using the best organic local products it can find.

We also want to make it a place of warmth and connection.

Todd loves YouTube and found this video and showed it to me. I thought I knew a lot about bread but there’s some amazing information here. It points out that grocery store bread has 20-30 ingredients! Homemade bread has 3 ingredients - water, flour and salt.
Some recipes add butter and yeast.

Many people cannot tolerate commercial bread, and it isn’t that bread itself is evil, it’s that commercial processing took out all the good stuff that makes it a balanced food and then they added fake stuff back into it. It’s sad.
If you want to enjoy bread in your diet, please make your own or buy from a local friend. There’s a lot of us out here! I recommend a farmers market or Facebook marketplace in the off season.
