And here she is… Rye-Anna. 🖤

If you saw my video yesterday about the $60 New York City rye loaf, this is where that little experiment led me.

This is 100% whole rye sourdough, made with rye berries that I fresh-milled only minutes before they went into the dough. No wheat flour. No commercial yeast.

It has been so interesting to make — and now comes the hardest part: a minimum 8-hour rest before I can cut into her. I cannot wait to see the crumb and, more importantly, taste what 100% fresh-milled rye actually brings to the loaf.

Tomorrow I’m making another with caraway seeds for that traditional “rye bread” flavor so many of us recognize. Fun fact: much of the distinctive flavor people associate with classic rye bread actually comes from caraway, not the rye grain itself. Rye has its own earthy, deep flavor — and tonight I finally get to taste it completely on its own.

The experiment continues… 🖤

I’m not shaming anyone’s priorities. It’s a choice.

If you want more food for less money, that’s valid. If you prioritize quality ingredients, sourcing, craftsmanship and process, that’s valid too.

What I am saying is this: it’s ridiculous to claim you can recreate a genuinely high-quality, labor-intensive product for $10. You may recreate the idea, but if you have to change the ingredients, sourcing and process to make it cheap, you didn’t recreate the same product.

You don’t have to think a $60 loaf is worth it to you to understand why it costs $60.

And yes, I’m recreating my own version. Will it be $60? No. Will it be $10? Absolutely not.

I’m not trying to see how cheaply I can make it. I want to see how well I can make it.
