One of the reasons I love baking so much is because of all the wonderful women in my life who taught me that food is one of the sweetest ways to show love.

I grew up in a family where cooking and baking were definitely love languages. One of my favorite memories is of our sweet grandma baking each of us birthday cakes every year. No matter what, she made sure there was a homemade cake waiting for us.

This was that cake: The Lazy Daisy Cake.

On this Cake Day Saturday, I’m feeling a little nostalgic and remembering my late grandmother and my mom, who both taught me so much about caring for others through food. So today I’m sharing one of my all-time favorite cakes with you.

Lazy Daisy Cake is a moist, warmly spiced cake topped with a rich coconut-pecan topping that becomes beautifully caramelized as it bakes. It’s simple, old-fashioned, and absolutely delicious.

FROM THE ARCHIVES: This 1920 photo shows workers at the Doty Lumber & Shingle Co., which owned the sawmill on the Chehalis River.

The men are shown working on and around a steam donkey.

Steam power was introduced in 1900 and was used to haul and load large logs from the woods to the railway landing.

Doty is located west of Chehalis off of state Route 6.

The town is named after Chauncey Albert Doty.
