Why do we promote microgreens so much? Read the following article from NC State about broccoli microgreens and cancer.

There are many other studies being performed throughout the country showing benefits from cancer to blood sugar levels to cholesterol to blood flow, etc. These little veggies can contain up to 40x the nutrient content as their mature plant.

Healthy, fresh and nutrient dense is what these offer. An added benefit for the way we grow in conjunction with is that these are grown hydroponically (in water) in a confined indoor space. No worry of harmful soil born pathogens. No contamination from outsiders. Just clean, fresh, healthy microgreens.

We will be doing a series on microgreens in the coming weeks showcasing growing, harvesting, how to use these little plants, benefits, etc so get ready and get excited!!!! Ask your questions now and we will respond and include in the series.

These beauts were just pulled (these are about 1/20th of the bed) and will be delivered this afternoon. We grow everything from seeds and use regenerative agriculture techniques. No short cuts. Just good, clean produce. You aren't finding much like this on the grocery store shelf!

Our latest project (I have been trying to get this done for like 2 years) was finished just before the rain. We are now capturing rain water runoff from the greenhouse so we can water our plants. The rain we received last night yielded us about 700 gallons. We are hoping to set up another storage tank with small tanks that feed drip lines to our growbeds to make watering a little more efficient while also utilizing the magic that falls from the sky. These things take time, but the progress we are making is pretty substantial. We want to be good stewards of everything that we have.

Why are we so obsessed with microgreens?

Microgreens contain 40 to 60x the amount of nutriention compared to full grown vegetables. They are extremely high in vitamins, minerals and antioxidants. As an added interesting bodily reaction, when eating microgreens, the chewing techniques naturally creates a substance called sulforophane (look it up). This substance is basically a health wonder.

Some of my favorites include broccoli, radishes and arugula.

Broccoli - mild, fresh flavor packed with vitamins A, C and K to help vision, skin, immune system, blood, bone health with anti-cancerous properties, reduces inflammation and helps to detoxify the body to name a few.

Radish - distinct peppery flavor rich in vitamin C and K plus anthocyanins to help with blood and bone health, anti-inflammatory properties and may help reduce risk of heart disease and certain cancers plus many more benefits.

Arugula - intense peppery flavor packed with vitamins A, C and K plus glucosinolates to help support vision, skin, immune functions, blood and bone health and may help prevent cancer and reduces inflammation plus other benefits.

These three are some of my favorites - Mixed in a bowl with evoo, salt, mozzarella and pumpkin seeds makes for an extremely fresh, highly nutritious lunch or snack that will boost energy (without a crash) and keep you satisfied for hours. Your body will be flooded with nutriention. It can be hard to get your 5 servings of vegetables a day, but microgreens make it really easy.

Healthy living is what we are after and microgreens are as good as they come.
