This has been a long time coming, and we’re so glad to be popping up at the Wednesday morning Chico Farmer's Market next to Trader Joe’s.

Progress update! We’re putting the finishing touches on our new Root Beer Bitters.

After a 3-month cold extraction, the new batch tasted fantastic—but it was just a little too astringent and bitter. So we added more vanilla bean, star anise, and licorice root, then let it sit for another month to round things out.

It’s almost done now, and the flavor is incredible. Mixed with sparkling water, it makes the best root beer-flavored seltzer. It’s refreshing, complex, and a great alternative to sugary soda—made entirely from whole, organic plants.

Named for our baby girl, Lily, this non-alc cocktail drinks like a minty, lavender-kissed French 75. 🪻

Gin (traditional or non-alcoholic) is shaken with lavender syrup, lemon juice, our Lavender Chamomile Bitters, and mint, then topped with sparkling rosé. The result is delicate, floral, and refreshing, with just enough texture from the syrup and bubbles.

What exactly are cocktail bitters? 👀

Bitters are like liquid seasoning—like salt and pepper for your drinks. A few dashes adds complexity, bite, and helps to balance sweet and sour flavors in a cocktail.

We’ve been testing a root beer bitters recipe for the past couple of years, and we’re so excited that it’s now finally in the tank, extracting slow and steady.

Every week, the aroma and flavor keep developing. We typically let our bitters extract for about three months, but we might go a little longer with this one.

Mexican sarsaparilla root, dandelion root, gentian root, licorice root, ginger root, vanilla bean, birch bark, star anise, and cinnamon.

You know, like traditional root beer. Made from actual roots, bark, and spices. Not fake flavors and sugar.

Stay tuned. We’re thinking early fall, but they’ll be ready when they’re ready.
