Glimmerglass has arrived in the shop! Glimmerglass is the newest cheese from our friends at Lively Run Dairy. This cheese has the depth of flavor and complexity you come to love from world-class sheep’s milk cheese while embodying the ethos of eating locally from responsibly-sourced farms.

The milk for Glimmerglass is from a small cooperative of farmers that emphasize the welfare of the sheep.
Owner & Head Cheese Maker Pete Messmer and his team transform this high quality milk into exceptional cheeses.

Earlier this month, Susanne Messmer owner of Lively Run took us on a tour of the creamery and farm. She generously shared her wisdom and insights from over three decades of artisanal cheese-making during our tour and cheese-tasting. We are proud to feature their cheeses in our shop. Here are some photos from our visit!

Rounding out the rest of the summer schedule for classes at the Beacon Cheese Shop. (How did the time go so fast?!!) These classes are now live on our website. Snag them up while ya can!

🧀 Cheese 201: All about Cheddar. Ronan is going in deep on cheddars in this next level cheese course on August 21st
🍝 Pasta Making is back on September 11. This one definitely fills fast.

It's a million degrees outside so let's stand in front of an open flame and grill some burgers!!!! And we've got the the cheese to make it all worth it.

🧀 Maple Smoked Cheddar from Grafton Village + jalapeños: sweet heat, melts like a dream
🔵 Smokey Blue from Rogue Creamery+ mushrooms: funky, earthy, unforgettable
🍄 Truffle Falls from R&G in Troy NY + pickled red onions:a little fancy, a lot of personality.

All three of these American cheeses are in the case and ready to level up those patties. Pick them up in the Beacon + Cold Spring shops all weekend! We're open on the 4th of July so it's not too late.

Good luck to our monger Ronan, Kaspar and Jacob as the head to the last day of the The Cheesemonger Invitational 🧀⚔️. They've been practicing and studying and dreaming cheese for weeks and we couldn't be more proud of them all!
