CHICKEN LOLLIPOPS 🍗
Ingredients
Chicken
* 12 chicken wings, drumette portions
* 1 teaspoon salt
* 1/2 teaspoon black pepper
* 1 teaspoon garlic powder
* 1 teaspoon paprika
* 1/2 teaspoon ground ginger
* 1/2 cup cornstarch
* Vegetable oil, for frying
Sauce
* 1/4 cup ketchup
* 2 tablespoons honey
* 2 tablespoons soy sauce
* 1 tablespoon sweet chili sauce
* 1 tablespoon rice vinegar
* 2 cloves garlic, minced
* 1 teaspoon grated fresh ginger
* 1/2 teaspoon sesame oil
Garnish
* 1 tablespoon sesame seeds
* 2 green onions, thinly sliced
Directions
1. Prepare the chicken: Using a sharp knife, push the meat down toward one end of each drumette to create the classic lollipop shape. Trim away excess skin and meat from the exposed bone.
2. Pat the chicken dry with paper towels. Season with salt, black pepper, garlic powder, paprika, and ginger.
3. Place the seasoned chicken in a bowl and toss thoroughly with cornstarch until evenly coated.
4. Heat about 2 inches of vegetable oil in a deep, heavy-bottomed pot to 350°F (175°C).
5. Carefully add the chicken lollipops in batches. Fry for approximately 7–9 minutes, turning occasionally, until deeply golden and cooked through. The thickest part should reach 165°F (74°C).
6. Transfer the chicken to a wire rack or paper-towel-lined plate to drain.
7. Make the sauce: In a saucepan over medium heat, combine ketchup, honey, soy sauce, sweet chili sauce, rice vinegar, garlic, ginger, and sesame oil.
8. Simmer for 2–3 minutes, stirring occasionally, until the sauce is glossy and slightly thickened.
9. Add the fried chicken lollipops to the sauce and toss until every piece is beautifully coated.
10. Transfer to a serving platter and garnish with sesame seeds and sliced green onions.
11. Serve immediately while hot, crispy, juicy, and coated in the sticky sauce.
