Maple Muffins
2 cups all purpose flour
½ cup packed brown sugar
2 teaspoons baking powder
½ teaspoon salt
¾ cup milk
½ cup butter, melted
½ cup TenKate Hill very dark maple syrup
¼ cup sour cream
1 farm fresh egg
½ teaspoon vanilla
Topping:
3 Tablespoons flour
3 Tablespoons granulated sugar
½ teaspoons ground cinnamon
2 Tablespoons cold butter
Whisk together flour, brown sugar, baking powder and salt.
In separate bowl, whisk melted butter, egg, milk, syrup sour cream and vanilla.
Spoon flour mixture into wet ingredients and stir until just moistened.
Fill greased or paper lined muffin cups 2/3 full.
For Topping: combine flour, sugar and cinnamon. Cut in butter until crumbly.
Spoon topping over muffin batter. Bake at 400 degrees for 16 – 20 minutes. Cool for 5 minutes before removing from pans to wire rack.
Tip: I always add a little extra topping!
