We just got Spelt flour made for tomorrow's Peoria Riverfront Market . Spelt is a Ancient grain and make a robust nutty, buttery flavored flour! It has strong enough gluten for sourdough but also works great for waffles cookies, pancakes, and other quick breads! It truly is an all purpose grain with old world roots and Heritage. We are extremely excited to offer it!

We will be in the Northwoods Mall parking lot today only for the relocated Peoria Riverfront Market. Maybe this is an opportunity for those who haven't been downtown to come out and see the best farmers market around! And yes we are completely stocked up again!

We are adding our newest flour, Spelt. We taste tested the flour and it was very nutty with a hint of butter. We're looking forward to some spelt waffles topped with Buffalo Trace barrel aged maple syrup! Look the the blue canopy that says Cabin Fever Sweets!

Spelt showed up today. What's spelt you ask?

Spelt is a genetic cousin of modern wheat, retaining much of its primitive genetic profile because it has largely escaped intense industrial hybridization.

Nutrition: It is generally higher in protein, certain fats, and crude fiber than many modern wheat varieties. It is also a good source of iron, magnesium, and B vitamins.

Digestibility: Because spelt’s gluten has a more fragile and water-soluble protein structure, many people with mild wheat sensitivities find it easier to digest than modern, highly-refined wheat.
