The Svec Farm, family owned since 1898, is proud to offer grassfed, grass-finished beef directly to customers. Our beef is available by the whole, half, or mixed quarter, or by retail cuts. Our Belted Galloway cattle are a smaller, heritage breed that finishes very well on grass, resulting in tender and juicy meat. Not only are our cattle delicious, they are also good for you and good for the land

I made a run to the butcher today to pick up a new load of beef.(Yes, that means ground beef is back in stock — we can all breathe easy now.) The clouds were absolutely gorgeous for my drive. 😍

We raise grassfed, grass-finished beef and lamb under the beautiful skies of eastern South Dakota. What can I say, that sky makes for the best tasting beef! Though our heritage breed Belted Galloway cattle and grazing practices may have something to do with it too. Local eaters rejoice. 😊

Did you know there are only two flank steaks per cow? It’s true. When we had this grilled steak salad the other night, we used all the flank steaks from a whole animal. And we enjoyed every bite. Give it a try and see what you think!

Is it June already? 🥲 We’re loving the beauty of the cows on grass and wanted to share these tree grove views with you. This was a short stop for the cow-calf pairs since there’s not a lot of grass in this spot, but it was a lovely one.

Our Belted Galloway cattle graze all summer on pastures on our family farm near Estelline, SD, then in winter eat hay from our land. That’s how we raise grassfed, grass-finished beef for our local community. Thanks for following along!

Family vacations are hard when you’re running a livestock operation. Aaron thought he would join me for part of the vacation with my family (and our kids), but instead he ended up staying home the whole time. The good news is he really loves the cows and being home on the farm. And I really enjoyed the time with my family and the things we got to do. Seeing the bison in Custer was definitely a highlight!

We aren’t usually frolicking in the Black Hills of South Dakota. We’re based on the east side of the state near Estelline, SD, where we raise grassfed, grass-finished beef and lamb for local folks who want it done right.

It’s May! That means we’re getting all our animals out on pasture for fresh grass. We get our walking in setting up portable fences … and we get to drink in the beautiful skies.

Sometimes the pressure of keeping grass in front of multiple groups of animals can be intense, but we love the chance to be outside, using our bodies, and raising high quality food for our community.

My mural is done! My community of Estelline called for art to celebrate our nation’s 250th anniversary and I decided to submit a mural on a 4x8 sheet of plywood. Themes were encouraged to be rural living, agricultural, and so on — so I created a scene of our Belted Galloway cattle in the pasture with milkweed and monarchs.

I hope you enjoy this little process video! I was so grateful for my sister helping me transfer the image with her VR headset when she visited, and helping me with a lot of painting. My son Harry helped me paint the butterfly.

May is a beautiful time on the farm. The weather is lovely and the kids just started summer vacation. And best of all, it’s the season of babies. 🥰 The calves and lambs are dropping daily and we love to see them!

Yesterday I had the honor of showing the farm to a group of Honors College students from across the country participating in a Sustainable Agriculture Justice Field Course through SDSU. We visited the cattle and sheep and stopped in my super fancy 🤣 meat packing shed to give them an idea of what our operation looks like.
