Ployes are delicious buckwheat-and-wheat flatbreads from Acadian and Brayon cultures in Maritime Canada and eastern Maine and Quebec. They can lean sweet or savory because the holes or "eyes" are perfect for soaking up everything from butter and syrups, to a regional pork spread (cretons), stews, and soups like fricot.
