Hempler’s Camping Breakfast Hash 🍳
INGREDIENTS
1 lb. Hempler’s Ground Breakfast Sausage
3 large potatoes, cubed
½ teaspoon salt
¼ teaspoon pepper
1 small yellow onion, diced small
1 red bell pepper, diced small
¼ teaspoon red pepper flakes
8 large eggs
DIRECTIONS
In a large skillet (we love cast-iron for camping!), brown the sausage over medium heat, breaking it into small pieces with a wooden spoon, cooking over medium heat until it is fully cooked and no longer pink, 6-8 minutes. Transfer sausage with a slotted spoon to a plate.
In the same large skillet, add the cubed potatoes, season with salt and pepper, and cook for 7 to 10 minutes, until they’re about halfway cooked through, stirring occasionally.
Add the onion and cook for another 3 minutes until the onion is soft, stirring occasionally.
Add the sausage back to the skillet along with the bell pepper and red pepper flakes. Reduce the heat, and continue cooking until potatoes are cooked for another 10 minutes. You can also cover the skillet; this will cook the potatoes faster. Once the hash is looking golden and crispy, it’s time to add some eggs.
In a nonstick skillet, cook the eggs until the whites are set but the yolks are still runny—season lightly with salt. Set eggs aside.
Top the skillet with the eggs. Season with salt and pepper and garnish with scallions.
