Bakery cupcakes are cute… but let’s be honest—they’re usually just loaded with sugar... So we made a spring swap that actually feels as good as it tastes 🌸✨
Say hello to these French Vanilla Cupcake Shortcakes—light, fluffy, layered with berries, and made with TruEats (aka no refined sugar, plus a little protein boost 💪).
This swap gives you all the spring… and none of the sugar. 🌼
French Vanilla Bakery Cupcakes (Shortcake Style!)
Makes 10–12 cupcakes
Ingredients:
• 1 cup milk of choice
• 1 pack TruEats French Vanilla Cupcake & Cake Mix
• 2 eggs
• 2 tbsp olive oil
• 1 cup icing of choice
• Blueberries + raspberries to top
Directions:
1. Add all ingredients (except icing + fruit) to a medium mixing bowl and mix until combined.
2. Spoon into a lined muffin tin.
3. Bake at 350°F for 15–20 minutes.
4. Let cool, then frost and top with berries—or slice and layer like shortcake for the full effect 😉
