It's hard to find people interested in duck eggs, but let me tell you, if you like to bake then duck eggs are the way to go. I used 2 in this cinnamon crumble banana bread and my mouth is watering waiting for this to cool off. Our ducks free range, so this adds a rich orange color to the yolk and adds extra moisture to bake goods, making them so much more enjoyable.
