The Shakopee Spring Food Truck Festival runs Saturday, May 16, from 11 a.m. to 8 p.m. Lineup includes Cousins Maine Lobster, Don Ramon, OG Zaza, Cafe Cairo, Rollin Nolen's BBQ, Eggroll Queen, and 25+ more — plus Basic & Boring, Lili Horizon, and Defyance taking the stage.
