May is Beef Month, and with Memorial Day weekend right around the corner, we're breaking down three cuts worth knowing at every price point.

Great beef doesn't have to mean the most expensive cut.

Budget: Chuck Roast
Cut from the shoulder, chuck is one of the most flavorful but isn't notoriously tender. It takes time to cook, but rewards your patience. Best enjoyed when cooked slow as a pot roast, shredded beef tacos, or slow-cooked sandwiches.

Mid-Range: Sirloin
A leaner steak with solid flavor that works for just about any occasion. Great on the grill, in stir fry, or sliced thin over a salad.

Premium: Ribeye
The ribeye is renowned for its marbling, which gives beef its flavor and tenderness. Best enjoyed simply, on the grill or in a cast-iron skillet.

We're headed to Yuma Feedlot today to meet Jorge Perez!

Jorge serves as a Shipping and Receiving Supervisor and has been a valued member of the team for six years. With a background rooted in the livestock industry, Jorge brings a depth of experience and appreciation to his role.

When asked what makes him passionate about the beef cattle industry, Jorge shared, "I have always enjoyed working in the livestock industry, as I have had the good fortune of raising Brahman cattle alongside my father in southern Mexico. Being at one of the largest feedlots in the world means witnessing the remarkable results of automation, genetics, nutrition, and proper livestock management."

Outside of work, Jorge enjoys taking to the open roads of Colorado and soaking in the breathtaking mountain views..

May is Beef Month, and we thought it was worth taking a moment to put that into perspective.

Americans consume about 12.8 million tons of beef every year. That's roughly 56 pounds per person, making beef the top protein choice for consumers nationwide year after year.

At Five Rivers, we're proud to play a role in meeting that demand. As the world's largest cattle feeder, we produce enough beef to feed the entire populations of Colorado, Wyoming, Montana, Idaho, and New Mexico...combined.

We're headed to Colorado Beef in Lamar today to meet Armando Fernandez Martinez!

Armando has been a Pen Rider with Five Rivers for 10 years and truly enjoys his work. He shared, "In the 10 years that I have worked in the company, nothing makes me feel better than being horseback and knowing that I am doing my part in ensuring healthy, well-cared-for cattle."

Outside of work, Armando loves traveling back to his hometown in Mexico to watch the Charrería, connecting his love of horses and cattle.

We're headed to Hartley Feeders in Texas today to meet Juventino Espinoza!
Juventino serves as the Assistant Yard Department Manager and has been a dedicated member of the team for over 17 years. His experience and commitment to the cattle feeding industry are evident in everything he does.

When asked what makes him passionate about the work, Juventino shared:
"The most important job is producing food, because without it we cannot live. I enjoy the freedom of working outside with the animals and working side by side with great people who know the BIG impact we have on the performance and quality of the cattle."

Outside of the feedyard, Juventino dedicates his free time to something truly close to his heart, teaching classes at his Catholic Church for teenagers and newlyweds, helping them build a relationship with God and strengthen their faith.

Thank you, Juventino, for your 17 years of hard work and for the servant heart you bring both to our team and your community!
