Wine of the Week! Pomalo Pet Nat

The word “pomalo” cannot be found in any Croatian dictionary. Literally, it means to take it easy, to relax, no stress, but also slow down, no worries…The true meaning is rooted in the coastal and island lifestyle of the Dalmatians.
Pomalo Wine Co. showcases indigenous Croatian grapes, produced naturally and through fresh and authentic expressions. The Debit grape is cultivated halfway between the coastlines and the mountains near the historic town of Šibenik. The microclimate offers plenty of sunlight for natural ripeness, while also getting cool winds at night to provide acidity. Mostly fertile topsoil with finer brown clay stones, and a rugged and tough limestone foundation.
Hand-harvested grapes were destemmed, macerated on the skins for 5 days, then pressed into a stainless steel tank to undergo spontaneous fermentation. Before fermentation was finished, the wine was bottled and left for 5 months on the lees. Roughly disgorged. Annual production: 3,600 bottles.
A refreshing, fun, and zesty Pet Nat that captures everything about the pomalo lifestyle. On the nose, bright citrus, almond, and delicate floral or herbal notes. On the palate, zesty tangerine, tart grapefruit, and a distinct mineral/salt spray characteristic. Pair with raw seafood, light appetizers, or “fjaka” (aka doing nothing).
