Wine of the Week! Pomalo Pet Nat

The word “pomalo” cannot be found in any Croatian dictionary. Literally, it means to take it easy, to relax, no stress, but also slow down, no worries…The true meaning is rooted in the coastal and island lifestyle of the Dalmatians.

Pomalo Wine Co. showcases indigenous Croatian grapes, produced naturally and through fresh and authentic expressions. The Debit grape is cultivated halfway between the coastlines and the mountains near the historic town of Šibenik. The microclimate offers plenty of sunlight for natural ripeness, while also getting cool winds at night to provide acidity. Mostly fertile topsoil with finer brown clay stones, and a rugged and tough limestone foundation.

Hand-harvested grapes were destemmed, macerated on the skins for 5 days, then pressed into a stainless steel tank to undergo spontaneous fermentation. Before fermentation was finished, the wine was bottled and left for 5 months on the lees. Roughly disgorged. Annual production: 3,600 bottles.

A refreshing, fun, and zesty Pet Nat that captures everything about the pomalo lifestyle. On the nose, bright citrus, almond, and delicate floral or herbal notes. On the palate, zesty tangerine, tart grapefruit, and a distinct mineral/salt spray characteristic. Pair with raw seafood, light appetizers, or “fjaka” (aka doing nothing).

Grenachista: Someone fighting for the cause of the grenache grape because they believe it’s the unsung hero of the wine world, used in many of the best wines, but rarely getting the credit it deserves.

Casey Graybehl makes Rhone-style grenaches with California fruit. Painfully handcrafted in tiny lots from the best vineyard sources in California. Grapes harvested from the Algerfield and the Westfall vineyards in the Sonoma Valley.

This vintage had a rather cool growing season, and the fruit hung on the vine for an additional 32 days longer than the previous year. The fruit was picked in early October. It was whole cluster pressed into stainless steel tanks, cold settling for two days. Racked into stainless steal drums, neutral French barrels, and tanks to ferment with native yeast for long, slow, cold fermentations before being combined and aged before bottling in December.

Classy and vibrant with aromatics of pink grapefruit, fresh strawberry, watermelon rind, rose petal, and candied orange peel, concentrated with a refreshing line of minerality and zippy citrus finish.

New Spirit Alert! 🍀🍊 Flor de Azar is a premium, woman-owned and women-crafted Mexican Triple Sec distilled by Maestra Destiladora Hillhamn Salome in Mexico City.

True to the triple sec category (citrus-centered and bottled at a full 80 proof) while faithful to its place of origin, Flor de Azar reflects its creators’ values. All citrus is sourced from a family-owned farm in Veracruz and hand peeled for production; the heart of the fruit is then given away to the local community to be used primarily in cooking.

Flor de Azar is:

Sandy Cove is produced by Allan Scott, one of the winemaking pioneers in Marlborough, New Zealand. His son, Josh, is now in charge of winemaking. Vines grown in the ‘Rapura Series’ of soils (young soils, based on river silts and stones, low in nutrients, with poor water holding capacity, but with smooth sunstones that reflect the sun’s heat onto the grapes, enhancing ripening).

The fruit is picked at ultimate ripeness and with the high natural acidity typical of the region. Fermented and aged briefly in stainless steel on its lees.

Balanced and elegant. Exceptionally complex with aromas of lime and green apple. On the palate, ripe tropical fruits, blood orange, grapefruit, hints of fresh cut grass, and bone dry with plenty of minerality. Rounder, richer, and less aggressive than a typical New Zealand Sauvignon Blanc. Pairs well with shellfish, vegetarian dishes or goat cheese.

New Spirit Alert! Tequila Plantador Silver

The Vivanco family has been crafting tequila for 5 generations. They focus on estate-grown organic agave, sonic harmonization, and additive-free methods.

Plantador Silver is a classic example of Highland tequila, produced in Arandas with careful attention to every detail. Produced by Maestro Tequilero Sergio Cruz using 100% estate-grown Blue Weber, matured 6-8 years.

Roasted in brick ovens for at least 26 hours using culinary steam. Open-air fermented in stainless steel tanks for 5-8 days using proprietary and Caribbean rum yeasts with deep well water. Then, it’s distilled twice in copper pot stills.

A subtle and mellow nose, with cooked agave aromas of roast yam and potato skin, subtle strawberry, and a hint of cookies and cream. The palate texture is light, but the flavors are stronger, with distinct lime zest, cooked peach, cracked black peppercorn, and a hint of lemongrass
 
Serve it neat, chilled, on the rocks, or in your favorite cocktails — a classic margarita, ranch water, or paloma.

Márcio Lopes studied as an engineer, but cut his winemaking teeth working with Vinho Verde master Anselmo Mendes. He travelled to Australia to make wine, returning to Portugal in 2010 for his own projects. His winemaking is hands-off; he believes that if the fruit is good enough he will make wines that reflect the terroir. Márcio Lopes farms 5 hectares on granite soils and sources additional fruit from growers practicing sustainable viticulture without herbicides.

After careful hand-harvesting, the grapes are destemmed and undergo a short maceration to extract color and aromatic complexity. The wine is then slow-fermented in small vats and bottled unfiltered, preserving purity, texture, and a sense of place.

A brilliant example of modern Vinho Verde—lifted acidity, crunchy red fruit, and mouthwatering freshness, reflecting the Atlantic-influenced terroir of northern Portugal. The nose offers fresh cherry, plum, and subtle mineral notes. On the palate, tart red fruit meets saline minerality and zippy acidity, with delicate natural bubbles adding texture and a dry, refreshing finish.

Pair it with grilled sardines, ceviche, fresh oysters, goat cheese salad, prosciutto, or summer vegetable dishes.

John Wurdeman, an American artist, musician, restaurateur, and winemaker, and his business partner, winemaker Gela Patalishvili opened Pheasant’s Tears in 2007, with a focus on tracking down and reviving near-extinct grape varieties in Georgia. They ferment and age the majority of their wines in qvevris, traditional amphorae that are buried underground.

The winery’s name is a nod to a Georgian folk tale, which states that only a truly superlative wine could make a pheasant cry tears of joy. Bodbiskhevi translates to “gorge of Bodbi,” an important pilgrimage site from the 4th century.

45 year old vines on carbonic alluvial soil with some sandstone and quartz; lime rock and and sea-floor fossils deeper down. North facing towards the great Caucasus in the Alazani Valley. Grapes are harvested early and direct-pressed into stainless steel using a pneumatic press.

A rare expression of Rkatsiteli without skin contact, letting its shy fruit side and subtlety come through.Aromas of dried tropical fruits, honey, tangerine zest, and tea leaves. Sea floor soils impart ocean-y minerality to the wine, which shows as salty and nutty alongside super-bright pear and stone fruit. Dry, vibrant acidity, and structured.

Broc Cellars is a Berkley-based winery that makes refreshing and approachable wines for everyday drinking. Established in 2002 by owner and winemaker Chris Brockway, they use native fermentations and organically-grown grapes.

Cabernet Sauvignon from Wirth Vineyard in Solano County with Cabernet Franc from Masas Vineyard in Carmel Valley. Most destemmed with the remaining left whole cluster. Fermented with native yeast and pressed early to lessen the tannins.

Medium ruby red color. The nose offers plum, blackberry, black cherry, roasted red pepper, crushed herbs, earth, pepper, and cedar aromas. The palate delivers medium-plus body, juicy dark berry fruit, subtle herbal character, balanced acidity, and dry tannins with fresh finish.

Pairs well with grilled lamb, burgers, ratatouille, mushroom pasta, and aged cheddar.

Organically farmed. No Added SO2.

Márcio Lopes studied as an engineer, but cut his winemaking teeth working with Vinho Verde master Anselmo Mendes. Red Vinho Verde was once more common than white. This wine revives the tradition. 5-25 year old vines grown in granite soil. The grapes were destemmed, pressed by foot, and fermented slowly with no temperature control. Malolactic fermentation in the bottle. No filtration.

Deep purplish-red, nearly opaque. Aromas of wild blackberry, sour plum, black pepper, and earthy undertones. The palate is bright, fresh, tart and structured—dark berry fruit, rustic tannins, bracing acidity, effervescence, and a dry, refreshing finish.

Drink it chilled and pair it with grilled sardines, pork belly, aged cheddar, fatty fish, spicy barbecue, corn dogs.

Domaine de la Mongestine is a young estate pursuing organic viticulture with biodynamic principles in a region known for mass produced rosé for easy poolside enjoyment. Owners Harry and Celine Gozlan envision a project focused on farming with great care and making wines simply. Crafted on a certified biodynamic estate surrounded by forest.

Grapes grown in argilo-calciare soil. Fully destemmed. Separate 4-week macerations of Sauvignon Blanc and Grenache Noir, then combined. Vinted in stainless steel, fermented with native yeasts, and bottled with minimal sulfur. Unfiltered.

Lightly hazy hue with aromas of bitter orange peel, apple, quince, and exotic spice. The palate is textured with skin-contact grip and a chalky mineral underpinning. Fresh and expressive.

An orange wine for aperitif or pair it with Middle Eastern mezze, spiced dishes, or fresh shellfish.
